Vegan Granola

I'm not a vegan, but I love granola. This was an excellent recipe. I'm not a big molasses fan so I substituted comb honey or agave nectar. I also just used raisins instead of mixed fruit and apricots because I did not have them on hand. I will definitely make this again!

Tuna Salad

Very yummy! I did not use cucumbers (don't like them) and added extra beans. I used red wine vinaigrette dressing and LOVED the taste combination! Thanks for the idea!

Penne with Chicken and Pesto

This was very yummy! I didn't have some key ingredients and took a risk and tried to make it a little different. It was excellent and my husband absolutely loved it! I didn't have heavy cream, butter or milk. I used just olive oil for cooking the chicken. For the sauce I used jarred pesto, around 1/2-3/4 cup cream cheese, double amount of parmesan, a little mozzarella, and a 1/2 cup rice milk. I was lucky and it turned out wonderful!!! I also added some broccoli to get our greens in there as well.

Chocolate Chip Cookie Ice Cream Cake

Delicious! I had fun going crazy with this recipe for my sister-in-law's birthday. In a 9 X 13 casserole dish I covered the bottom and sides with whole chocolate chip cookies (the chunky Chips Ahoy Ones). Then I put on my first layer of ice cream - Chocolate fudge brownie. I used the slow churned because it spread easier. I froze it for 30 min. then spread chocolate topping all over it. Froze for 15 min. then added layer of vanilla ice cream. Froze 30 min. Added tub of Cool Whip and sprinkled with mini chocolate chips and wrote "Happy Birthday" with chocolate syrup. Froze overnight before the party. My chocolate syrup writing didn't exactly stay where it was supposed to, but the cake TASTED absolutely delicious! I had made it larger so their would be enough for the 14 people that were there. Well, there was only one small piece left! Everyone loved it and few people had seconds. THANKS SO MUCH FOR THE RECIPE!

Grilled Apple and Swiss Cheese Sandwich

Very yummy! Made with brie and muenster cheese, whole grain bread, and granny smith apples. Served with golden carrot soup from a different site. A wonderful fall lunch or dinner!

Roasted Veggies with Couscous

Mrs. Sigg's Fresh Pumpkin Pie

My family loved this pie, but the amount of brown sugar and pumpkin pie spice seemed a bit overwhelming to me. Will make again and try to adjust ingredients more to my tastes.

Basil Goat Cheese Pizza

Oh my gosh!!!! This was awesome! I followed the recipes measurements and added spinach and mushrooms on top. Used Trader Joe's wheat crust. This was the best ever!

Slow Cooker Lentils and Sausage

Very good. These are the changes I made: doubled carrot and celery, also added 1/2 cup chopped onion and 2 cloves garlic. Used chicken broth instead of beef. Used Rotel tomatoes with chilis instead of diced tomatoes, not drained. Used Hillshire Farm Spicy Sausage instead of Kielbasa (we prefer our food spicy). Cooked on high in slow cooker for 4 hours. Had to add another 1.5-2 cups of broth when done because it was too thick. Also, lentils were a little softer than I like...I'll try cooking on low next time. Served with cornbread and Tabasco sauce for even more of a kick.

Chickpea Curry

Quick Turkey-Bean Soup

To really cut down on time use frozen chopped onion, frozen chopped peppers, and minced garlic in a jar. Then the only thing you have to chop is the celery.

Grilled Corn on the Cob

Very good corn. If you buy corn that is already shucked, wrap in foil after spreading butter and seasoning. I like to put green or red chili powder or seasoning salt on my corn to give it a little kick. Thumbs up!
