Oatmeal Peanut Butter Cookies

This recipe is awesome! I couldn't decide if I wanted chocolate chip cookies or peanut butter cookies, so I tried this. I cut down sugar to 3/4 c. brown and 1/2 c. white and added 1 tsp. vanilla and 3/4 cup chocolate chips. Even my husband, who is not a peanut butter cookie fan, loved them!

Basic Ham and Bean Soup

Used 4 cups chicken broth and 2 cups water and made it in the crockpot. It was perfect!!! So yummy!

Basil Goat Cheese Pizza

Oh my gosh!!!! This was awesome! I followed the recipes measurements and added spinach and mushrooms on top. Used Trader Joe's wheat crust. This was the best ever!

Quick Turkey-Bean Soup

To really cut down on time use frozen chopped onion, frozen chopped peppers, and minced garlic in a jar. Then the only thing you have to chop is the celery.

Tuna Salad

Very yummy! I did not use cucumbers (don't like them) and added extra beans. I used red wine vinaigrette dressing and LOVED the taste combination! Thanks for the idea!

Roasted Veggies with Couscous

Penne with Chicken and Pesto

This was very yummy! I didn't have some key ingredients and took a risk and tried to make it a little different. It was excellent and my husband absolutely loved it! I didn't have heavy cream, butter or milk. I used just olive oil for cooking the chicken. For the sauce I used jarred pesto, around 1/2-3/4 cup cream cheese, double amount of parmesan, a little mozzarella, and a 1/2 cup rice milk. I was lucky and it turned out wonderful!!! I also added some broccoli to get our greens in there as well.

Lentil Soup

Very good! Only changes I made was doubling the amount of carrots and celery, triple the spinach and used whole 16 oz bag of dry lentils. Also used Basalmic vinegar. Very yummy.

Slow Cooker Lentils and Sausage

Very good. These are the changes I made: doubled carrot and celery, also added 1/2 cup chopped onion and 2 cloves garlic. Used chicken broth instead of beef. Used Rotel tomatoes with chilis instead of diced tomatoes, not drained. Used Hillshire Farm Spicy Sausage instead of Kielbasa (we prefer our food spicy). Cooked on high in slow cooker for 4 hours. Had to add another 1.5-2 cups of broth when done because it was too thick. Also, lentils were a little softer than I like...I'll try cooking on low next time. Served with cornbread and Tabasco sauce for even more of a kick.
