Mom's Cucumbers

Exactly what I needed! I had everything on hand and I needed a last minute side dish for a picnic. Very yummy and light. I didn't understand why i would drain the cucumber juice only to add in water?? So I skipped the draining and skipped the water. Turned out great!

Easy Beef Stroganoff

Exactly what I was looking for. Tasted great! the only thing I did different was that I added about 4 cloves of garlic to the mushroom/onion when sauteing. This can easily be modified to be a bit more heart healthy by using ground turkey, omitting the butter and just using a tablespoon of healthy oil to cook the mushroom/onion/garlic and using a lite sour cream. YUM!!!

Florentine Artichoke Dip

This was amazing. I got a ton of compliments on it! I love to make things that are gluten free due to family food allergies, and this was wonderful to make!! The only thing I did different was double the garlic, and I added half a medium onion. I will def. be making this again!!!!

Quick Alfredo Sauce

Exactly what I was looking for. We had lots of leftover chicken from a bbq that I wanted to eat up so I made this sauce and threw in the chicken. I only had skim milk on hand, but it worked perfectly. I added exactly the 2 cups of skim milk. I also added a LOT more cheese, probably 3x the amount the recipe specifies, twice the garlic and garlic salt, and I put in a bit of pepper. So easy!!

Cheesecake Brownies

Not impressed. I have had brownies similar to these and I was disappointed that they didn't turn out like the ones I have had before. They were pretty blah. I will keep looking.

Bacon Wrapped Water Chestnuts I

I make these a LOT to bring to people's houses. The adults and the kids just EAT THEM UP!!! I cut the bacon into 3rds, and it is plenty long enough. I love these because I can cook them at home and then bring them in a little crock pot - they travel very well!!

Chocolate Zucchini Cake II

Very good! I shredded the zucchini with my food processor, so there was no 'chunks' of zucchini. I forgot that I ran out of vanilla, so I actually used maple syrup instead - the real stuff. The kids wanted the chips stirred in and not on top, but other than that I followed the recipe to a T. Great way to use up some zucchini and satisfy my sweet tooth at the same time. :)

Cucumber Crunch Salad

I made this as an alternative for the regular cucumber salad made with sour cream, as one of my guests has a dairy allergy. I was surprised at how much I liked it! A perfect lo cal / dairy free substitution to the regular cucumber salad! I too omitted the water - not sure why it is included and why so much. It was plenty liquid-y enough. I also used just 1 teas. of white sugar as I am allergic to artificial sweeteners. Thanks for the recipe!!

California Kabobs

These were AMAZING! I have a new favorite dish! I didn't have hot sauce, so I put in 1.2 tsp red pepper flakes. But they were pretty spicy and the kids didn't like it - I may try just omitting them next time. Also, I did not feel like the marinade was enough at all. I ended up tripling the recipe and that seemed perfect. Very yummy over rice! Thanks for another meal to add to my regulars!

World's Best Lasagna

Heck yeah this is the World's Best Lasagna!! I made this for Christmas, I got SO MANY compliments!!! It is a bit of work, but if I am going to make Lasagna, I am going to make some lasagna - I don't want it to be something I 'whip up' in a few minutes. I made this 2 days ahead of time. Then I took it out of the fridge about an hour before cooking, and I cooked it about 10 minutes longer. IT WAS AWESOME!!

Easy Salsa Meatloaf

It was just a normal Meatloaf recipe. I was expecting a bit more of a different taste from the Salsa, but it just tasted like plain old meatloaf. It wasn't bad - just ordinary.

To Die For Blueberry Muffins

Slow Cooker Roast Beef

I would rate it higher but WOW it was really salty!! I enjoyed the flavor but not the salt. Even my husband the salt lover agreed! If I ever try this again, I will have to use the low sodium soy sauce.

Delicious Ham and Potato Soup

This is a great potato soup recipe. My husband is an avid hunter so we had some good venison sausage to it instead of ham and it was great. Also we put in about 3 gloves of garlic, which may be a bit to much for some but we eat tons of it.

Flourless Peanut Butter Cookies

YUM!!!! I will have to say I was skeptical about baking peanutbutter mixed with sugar... but these turn out great! I added the 1/2 tsp baking soda and the 1tsp vanilla as others had suggested. I don't understand why some are saying they are not done in 8 minutes so they cooked them longer and they burned. That is because they ARE done in 8 minutes you sillies!! These are not like a regular cookie - remember they have no flour. They are still soft after 8 minutes, then CAREFULLY transefer them to a wire rack to cool. They will harden up as they chill out on the racks for a while. I am so happy to find this recipe, as my cousin has a wheat allergy and this is something I can make to bring to family dinners and she can eat them!!

Zucchini in Sour Cream Sauce

Oh WOW!! This is awesome! 6 servings, huh? Is it wrong that I ate all of it? Hum.... oh well - at least I got in all my daily recommended veggies for the day in one shot! Really though I would say it was more like 3-4 servings than 6. Would be great on top of some angel hair pasta with some halved grape tomatoes!! Or slice the zucchini diffrently and throw it all on top of some chicken! I am getting way to excited here .... I added garlic (I cook EVERYTHING with garlic!) and I only had boullion cubes, so I just tossed an entire cube in there. This is just SOOOOO good and so many posibilities!!!.........

Amish White Bread

I didn't think this had too much flavor, even for a plain white bread. It was very easy to make though, and a great recipe for my first time making it. I did not get any compliments on it at thanksgiving though, and that is NOT what I am used to!!
