One-Dish Rockfish

This was a great recipe, but I made a few changes. I heeded the other reveiwers' suggestion that there was too much broth in this recipe and substituted 1/2 cup canned clam juice for the vegetable broth. I had no fresh dill, so I used 1 teaspoon of dried. I salted and peppered the fish after settling it on the spinach, then thoroughly mixed all the other spices in a small prep bowl and sprinkled on top of the fillets before covering with the onion and lemon slices. My fillets were rather thick, so I found it necessary to add about 7-8 minutes to the baking time. I suggest checking to see if the fish flake easily with a fork after 25 minutes, then adding more time if necessary. Presentation is key, so I used a slotted spatula to slide under each fillet and spinach and then onto the plate, then garnished with the cerry tomatoes. Delicious and a great presentation for a dinner when you want to impress. BTW, I had fresh rockfish caught the day before in the Chesapeake Bay so this helped with achieving a final result that was memorable!

Marinated Grilled Shrimp

The hardest part of this recipe was peeling the shrimp! AND it tasted great. Served with some rice and grilled summer vegatables. My husband was a happy man with this meal!

Cream Corn Like No Other

This is for the times when you are going to reward yourself with something really rich tasting. I substituted 8 ears of fresh corn for the frozen. I cut the kernels off the cob (I have a handy-dandy special device for this ), then ran the back of a large knife over the shorn cobs to extract all the good juice from them. This is what really gives it a great, rich corn flavor. A little extra work, but worth it if you have some fresh corn and just don't want to eat it boiled again. I left out the Parmesan cheese and it still tasted great.

Simple Turkey Chili

This is a good weeknight dish. I added a chopped green pepper with the onion and substituted beef broth for the water. I also threw the minced garlic in after the onion and pepper had cooked for just 30 seconds before adding the remaining ingredients. (I have found with all recipes this is the best way to get full flavor from your fresh garlic without burning it.) To serve, I topped with shredded Mexican cheese and some chopped cilantro. Very good and my family enjoyed it!

Peachy Pork Chops

My husband really enjoyed this. I substituted sliced fresh peaches for the canned and one cup of orange juice for the peach syrup. Yummy and easy!
