Chicken Tortilla Soup V

Threw into the crock pot for about three hours on low (the chicken was already cooked and shredded from the previous night's dinner). I wasn't expecting much, but it was absolutely delicious!

Focaccia Bread

Pumpkin Chocolate Chip Muffins

Absolutely delicious and I am not a huge pumpkin muffin fan. I made one batch following the recipe exactly and one batch using applesauce as a sub for the oil. Both batches were so good. I did turn the oven done to 375 per other reviewers' suggestions.

Whole Grain Waffles

Wow! These waffles are absolutely amazing. My two preschoolers wolfed them down. My husband usually complains when I make anything with whole grains, but even he admitted they were really good. I didn't use any canola oil -- just used applesauce in its place and used half white sugar and brown sugar.

Sugar Cookie Frosting

A nice frosting for sugar cookies. My old recipe was a bit too soupy and I was looking for a recipe that was thicker. This was perfect. It also dried nicely for stacking.

Italian Herb Bread I

Fabulous! I substituted all-purpose flour and parmesan cheese since I didn't have bread flour and Romano cheese. This bread was moist and chewy -- we plan to try it as pizza dough this week! So easy.

Smooth Sailing Sugar Cookies

This was my first time to make cut-out sugar cookies, and I was nervous. The recipe could not have been easier and the taste is exactly what I was looking for in a cookie. Now, I just need to work on my cookie decorating skills.

Creamy Frosting

I needed a recipe for icing without confectioner's sugar since I was out, and I found this. I cooled my milk and flour mixture for about 45 minutes before I mixed with butter that had been sitting out for about an hour. No lumps -- good consistency. It is very sweet. Used a star tip to decorate mini cupcakes with the icing -- they look good and taste good. I couldn't eat a lot of this icing -- the mini cupcake with a swirl on top is just right.

Awesome Bow Tie Pasta

Quick, easy and healthy. I reduced the amount of balsamic vinegar to 2 Tablespoons based on reviews. I added garlic, sea salt, pepper, Italian seasoning, and Kalamata olives (chopped up). It was good -- I think it will be even better tomorrow.

Russian Chicken with Feta Cheese

Personally, I thought this dish was a three, but my husband thought it was phenomenal so I gave it a four. It was a lot of prep. The sauce was good. The chicken was overcooked -- it was a bit dry. I served it over brown rice. My husband hates brown rice but said he would eat it every night if it was served with this sauce. I thought it was okay.

Applesauce Oat Muffins

I was looking for a fast, easy, and delicious muffin recipe this morning, and I picked this one. They were delicious and moist. I made some plain. I added fresh blueberries to some of the tins and raisins to some others. I tripled the recipe ingredients and made 24 mini muffins. I also had enough batter to freeze 9 full-size muffins. Will definitely make again. The group I served them to also loved them.
