Quinoa with Veggies

This was my first time making quinoa. This is a great basic dish, which you can add whatever you want. I added leftover veggies -- onion, green bell pepper, carrots and asparagus. I also topped it with fresh chopped tomatoes, feta cheese and avocado. It was wonderful. I used my bag directions for cooking the quinoa though.

Carrot Soup

This was my first time to make carrot soup -- we had an abundance of carrots in the fridge that needed to be used. It came out great, very creamy and mild, sweet flavor. I didn't have cayenne pepper, so I used a bit of chili powder instead.

Smooth Sailing Sugar Cookies

This was my first time to make cut-out sugar cookies, and I was nervous. The recipe could not have been easier and the taste is exactly what I was looking for in a cookie. Now, I just need to work on my cookie decorating skills.

Quesadillas I

I used a combo of cheddar and mozzarella cheese. I also stuffed with olives, tomatoes and mozzarella and taco seasoning. The cooking directions were perfect. I always get my quesadillas a little burned or undercooked but these directions solved that problem!

Curried Butternut Squash Soup with Almonds

I added more curry to the recipe but wish I wouldn't have. The curry overwhelmed the other flavors in the dish. It would have been better as is for our tastes. I like the toasted almonds. My picky 2-year-old liked it enough to dip her carrot sticks in it, so that makes it a repeat recipe in our house.

Homemade Fresh Pumpkin Pie

I added a teaspoon of all the spices to the filling since I put in about 2.5 cups of pumpkin. The filling is delicious, absolutely perfect. I wasn't completely happy with the crust. It shrunk on me. I am not sure why that happened. On the plus side, the crust didn't fall apart so it cut easily into pie slices. It was pretty chewy though. I like a more tender crust. I will use the filling recipe again but will keep looking for another crust.

Easy Chicken and Broccoli Casserole

It was easy to pull together and delicious. I used chicken broth with cornstarch and flour and it worked perfectly. I also added a sprinkling of parmesan cheese on top. I loved the combo of the lemon and curry flavor.

Applesauce Oat Muffins

I was looking for a fast, easy, and delicious muffin recipe this morning, and I picked this one. They were delicious and moist. I made some plain. I added fresh blueberries to some of the tins and raisins to some others. I tripled the recipe ingredients and made 24 mini muffins. I also had enough batter to freeze 9 full-size muffins. Will definitely make again. The group I served them to also loved them.

Whole Grain Waffles

Wow! These waffles are absolutely amazing. My two preschoolers wolfed them down. My husband usually complains when I make anything with whole grains, but even he admitted they were really good. I didn't use any canola oil -- just used applesauce in its place and used half white sugar and brown sugar.

Amazing Pork Tenderloin in the Slow Cooker

The au jus is amazing -- I made mashed potatoes to go with the meal, and the au jus drizzled over the potatoes were absolutely delicious. The pork was okay -- not really great, not bad either.

Creamy Frosting

I needed a recipe for icing without confectioner's sugar since I was out, and I found this. I cooled my milk and flour mixture for about 45 minutes before I mixed with butter that had been sitting out for about an hour. No lumps -- good consistency. It is very sweet. Used a star tip to decorate mini cupcakes with the icing -- they look good and taste good. I couldn't eat a lot of this icing -- the mini cupcake with a swirl on top is just right.

Awesome Bow Tie Pasta

Quick, easy and healthy. I reduced the amount of balsamic vinegar to 2 Tablespoons based on reviews. I added garlic, sea salt, pepper, Italian seasoning, and Kalamata olives (chopped up). It was good -- I think it will be even better tomorrow.

Russian Chicken with Feta Cheese

Personally, I thought this dish was a three, but my husband thought it was phenomenal so I gave it a four. It was a lot of prep. The sauce was good. The chicken was overcooked -- it was a bit dry. I served it over brown rice. My husband hates brown rice but said he would eat it every night if it was served with this sauce. I thought it was okay.

Hearty Bean Chowder

This was not an enjoyable meal at all. It didn't look appetizing and the entire chowder had an off taste to it. I can't put my finger on what the odd flavor was but it wasn't good. I won't be making this again.

Broccoli Soup

We were tired of our usual broccoli dishes so I tried this tonight. I used fresh broccoli since I didn't have any frozen. My husband liked it and my 1 year old and 3 year old ate a lot of it, which was surprising since they both won't eat broccoli any other way. I thought it was okay and wouldn't make it again for myself but since it went over so well with the kids I will make it again.
