Chicken Parmesan

I have to say - this is the best chicken parm I've ever made! I used Italian breadcrumbs instead of panko, because that's all I had, and it was still amazing. I've struggled for a long time with other recipes because they left such a mushy coating. This one was perfectly crispy, and my husband kept commenting on how moist the chicken was. I'll only use this recipe from now on!

Crab Brunch Casserole

Very good! I made this for dinner for company (served over egg noodles) and they ended up requesting the leftovers to take with them! I made a few changes based on other reviews. 1 - I substituted 1/2 cup sauteed onions for the dried onions. 2 - I added a half tablespoon of Old Bay. 3 - I couldn't find unseasoned croutons (and was worried based on other reviews of the seasoned overtaking the crab taste) so I used bread cubes. This was PERFECT for company! I will definitely make again!

Angel Chicken Pasta

This is a fantastic recipe! I would give it more stars if I could. Everyone always asks for the recipe, and I have to make it every two weeks for the hubby. Use linguine instead of angel hair, it holds the sauce better.

Absolute Mexican Cornbread

Almost dessert like - very good! Followed the instructions exactly. The only thing I might change for next time is to add a sprinkling of jalapenos to give it some heat.

Salsa Chicken Rice Casserole

Very good! Will definitely make again. Made as written, but I was not a fan of the crisp cheese crust on top, so next time I will leave the top layer of cheese off until the last 15 minutes of baking to make it gooey instead of crispy.
