Kidney Bean Sausage Supper

Reviewed: Dec. 14, 2009
I used frozen chopped onions, omitted the green pepper, added frozen green peas, used regular diced tomatoes, added kosher salt, pepper, and mrs.dash. After I served it over brown rice and topped it with lots of hot sauce. I have a feeling it will taste even better tomorrow. I may cook this again because it's low calorie and easy to make.

Beefy Barbecue Macaroni

Reviewed: Dec. 24, 2008
This was an easy tasty meal! I used 2x the milk and cayenne pepper, 1lb of ground sirloin instead of 3/4 lb ground beef, I added mushrooms, and kidney beans, and 4 cloves of garlic instead of 3, Sweet Baby Ray was the BBQ sauce I used, it is was fantastic. It wasn't too sweet or bbq tasting as the other reviewers stated, probably because I added the extra ingredients? I wanted to save time, so I didn't melt the butter, milk, and cheese beforehand, I just added it cold to the mix towards the end, it is was just fine. I also didn't put it in the oven as other reviewers had suggested. I will make this again for sure, it was like homemade hamburger helper, and my boyfriend who hates Hambuger Helper loved this!!!

World's Best Pasta Sauce!

Reviewed: Dec. 16, 2008
I thought this was great! I didn't have any tomato paste, so I added more tomato sauce and water. I also used 2 kinds of sausage, mild and hot, and also added more of both than the recipe called for. I didn't have Italian seasoning, so I just added more basil. I also added more garlic, 3 cloves, and more onions just because I like them so much! I will make again...easy and my family loved it.

Grilled Pork Tenderloin with Balsamic Vinegar

Reviewed: Jul. 29, 2008
Pretty good! I added more garlic than it called for, kosher salt, and thinly sliced pork. Easy recipe to remember, and I always have these ingredients on hand. I'm sure I'll make it again. Maybe next time I would reduce the leftover sauce and serve the pork with the sauce drizzled on top!

Baked Halibut Steaks

Reviewed: Apr. 1, 2008
This was an amazing fish recipe! I used all fresh (and mostly organic) vegetables, except for the chopped garlic from the jar, and it tasted so fresh and healthy. I doubled the veggies, and added yellow squash. I also used the garlic and herb feta cheese and doubled that as well. I will make again for sure. My boyfriend's kids, 12yr old and 15yr old both went back for seconds!

Strawberry Cake II

Reviewed: Mar. 30, 2008
This is so delicious!!! It is so moist! I used whole frozen (but thawed) unsweetened strawberries. Everyone loved this cake! I used the "Cool Whipped Frosting" using fat free whipped cream and it was still awesome! I put the frosting directly on the cake (not adding strawberries to it) I chopped white chocolate chips and topped the frosting with them, and then with sliced strawberries. These flavors were amazing together! I am bringing the leftovers to the office tomorrow!

Cool Whipped Frosting

Reviewed: Mar. 30, 2008
AMAZING frosting!!! I used fat free whipped cream and it turned out great! I may never use another frosting, homemade or store bought except this one!!! I used it on top of "Strawberry Cake II" here on this site. I chopped some white chocolate chips and topped the frosting with them!

Peanut Butter Chicken

Reviewed: Mar. 24, 2008
After reading almost all of the previous reviews, I made these additions....I added 1 chopped green pepper, 2 chopped garlic cloves (from the jar), a few sprinkles of cayenne pepper & smoke paprika, 1 tsp of chopped ginger (from the jar), one tsp of red chili sauce, one tsp fish sauce, few splashes of lime juice, and reduced the peanut butter to about 1/3 to 1/2 cup. It came out spicy (but I like it that way). Next time I will add another vegetable, like snow peas or broccoli. Overall, I enjoyed it and will make it again. I couldn't imagine not having made the additions though....

Swiss Turkey Tenderloin Strips

Reviewed: Mar. 18, 2008
This was just ok. If I made it again I would have to thicken up the sauce and add some sort of seasoning that would spice it up. I did add nutmeg and smoked paprika from a previous reviewer's suggestion, and I think that helped, but it still lacked flavor. It was good, just not great. Maybe next time I will cooked some veggies with it, like red or green peppers or something.

Sara's Soy Marinated and Cream Cheese-Stuffed Salmon

Reviewed: Feb. 4, 2008
This was an awesome salmon marinade! I didn't do the stuffing though. I replaced the honey with some brown sugar. I also cooked the salmon in the marinade. And I didn't have scallions. It turned out perfectly and I will make it again, and try the stuffing too.

Spanish Rice II

Reviewed: Jan. 23, 2008
Authentic tasting spanish rice! I did use chicken stock as recommended instead of water. I also added another 1/2 tsp of chili powder. The canned tomatoes I used were the kind with basil and garlic. I also added about a tsp of canned green chili peppers.

Chocolate Chip Cheesecake

Reviewed: Jan. 14, 2008
This was my first time making cheesecake and it was a good experience. I followed the recipe exactly, except that I used a pre-made pie crust, plain. I was awesome, but next time I might try chocolate. I used the entire amount of semi-sweet chocolate chips in the the batter and then after it cooked, as soon as it came out of the oven, I sprinkled more chips on top so they would slightly melt and stick the to top. I let it cool on the counter for an hour before putting it in the fridge overnight. It came out perfectly, it is dense with the chips spread from top to bottom evenly (not sure why some reviewers said theirs fell to the bottom??) I will make this again for sure!

Butternut Squash Supreme

Reviewed: Jan. 13, 2008
I didn't tell anyone what this was made of, I just said it's a healthy alternative to mashed potatoes and everyone loved it so much! When I said it was called butternut squash, my boyfriend's son, who is 12, was on his third helping and he said he was glad I didn't tell him the name before he ate it or might not have loved it so much! I added the poultry seasoning as suggested by previous reviewers, but I did not saute the onions, and it still turned out excellent. I added more butter crackers than it called for and covered the glass baking dish with foil. I removed the foil at the end and baked for an additional 5-10 minutes until it browned the crackers a little. I will be making this again for sure!

Halibut Weaver

Reviewed: Jan. 13, 2008
Awesome! I served the fish with the remaining sauce and it was delicious! I rinsed the halibut with water and then soaked it in milk...a suggestion by a previous reviewer....and this made the fish less fishy tasting and more meaty. I will make again!

Peanut Butter Cup Cookies

Yummy! I unwrapped the cups and put them in the freezer as suggested by another reviewer, this kept the cup whole instead of melting. I brought them to the office and everyone loved them! I will make them again!

Salmon with Creamy Dill Sauce

Reviewed: Jan. 10, 2008
Good creamy sauce! I added a few dashes of chile powder and chipotle to the sauce. I also added another teaspoon of horseradish. I topped the salmon with a handful of chopped green onions before cooking. I really enjoyed it but my boyfriend thought it was boring, and needed more flavor. I served it with white sticky rice....the sauce was amazing with the rice too!

Pumpkin Cookies V

Reviewed: Dec. 2, 2007
These turned out amazing! Make sure to adjust the serving portion because this made soooo many! I brought them to work and everyone loved them. The only thing I did differently was that I melted some cream cheese frosting and put a spoonful on half of a cookie and I did the other half with the carmel frosting....it made something similar to a black and white cookie. Those I enjoyed those more than the single carmel frosting ones. I also added a few dashes of pumpkin pie spice, nutmeg, and ground cloves (a suggestion by a previous reviewer) to spice it up a little. Then I sprinkled some nutmeg on top of the frosted cookies as well. I cooked some of the batches about 5 minutes longer than suggested and they came out more like a cookie, the others were a little soft, still very good, just different, more like a cake-cookie. I will make these again for sure!!!

Batman's Best Caesar Dressing

Reviewed: Oct. 9, 2007
This was really good. I added salt and pepper, and only 1 tbsp of the anchovy paste. I would have liked it a little thicker....maybe next time I will add more sour cream. It is a keeper!
