Cajun Pasta Fresca

Very tasty. I made my own cajun seasoning. Next time, I'll cut down on the salt (it's quite a bit when you add the seasoning, added salt, plus cheese).

Chicken Breasts with Balsamic Vinegar and Garlic

This was good - both my husband and I enjoyed it. My chicken took longer to brown than in the instructions though. And next time, I think I'd add extra thyme.

Cajun Cake

Yum! I halved this recipe and made it in a 9 inch round pan. I poked the top of the cake with a fork. When I served it the next day, the cake was nice and moist. I might try subbing brown sugar for white next time as others have suggsted.

Vegetarian Haggis

This was excellent. My whole family loved it and it's not that much work as you can do the veggies and nuts in the food processor. I doubled the recipe and put it in a 13x9 pan and it made a ton. For the mixed spice, I threw in nutmeg, cinnamon, ground ginger, coriander and oregano. The recipe seemed quite forgiving, so you can be creative with the spicing. I served the haggis with a vegetarian gravy.

Caramel Shortbread Squares

Totally delish. It does make 40 small squares, but bet you can't eat just one. I used dark chocolate chips (with milk to get right consistency) instead of milk and they were fab. Left plenty of time to cool between layers and scored the chocolate to ensure they wouldn't be too hard to cut. Didn't have any issues with crust being crumbly. As others noted, make sure you cook the caramel on very low heat or it will scorch.

Microwave Pralines

Very tasty. However, mine needed to cook longer and took longer than 3 mins to thicken sufficiently. I added some extra nuts and that helped. Family loved them. The recipe made 36 very small pralines, but they are quite rich - a little goes a long way.

Pumpkin Chip Cookies

These are tasty, but as the description says, the pumpkin flavour is quite subtle. For those who prefer a stronger pumpkin flavour, I'd suggest the pumpkin chocoloate chip cookies III recipe.

Vegetarian Shepherd's Pie II

This was really good. I doubled the recipe and it fed 5 for dinner plus leftovers for my hubby and I the next day - but we are pretty big eaters. I didn't add the salt because I thought it was salty enough without (the broth I used must have been quite salty). Also, I added a little bit of thyme and oregano and I thought this gave it a little something extra. I mashed the potatoes with some butter and milk to make them fluffy. Next time, I might add a little garlic and try cooking the lentils and carrots/walnuts/onions together as other reviewers suggested to dirty one less pot. But yeah, this was really good!

Lemon Coconut Squares

This wasn't as good as I expected. I made as directed, but if I were to try again, I would add extra lemon juice and cut the sugar as suggested by other reviewers. I found them too sweet and not tart enough for my taste. Also, they don't seem to be holding together all that well.

Annemarie's Lemon Bars

Meh - a little bland. Not very lemony at all. I would definitely add more lemon juice or some lemon zest if I made them again. Also, as others noted, too much crust and not enough filling. I found they need less cooking time than indicated as well.
