Cheesy Tuna Lasagna

Reviewed: Aug. 13, 2009
I think this recipe deserves an award. I have despised tuna for as long as I can remember, yet I find myself craving this recipe on a weekly basis. It is SO GOOD!!! I use 1/2 cup butter and saute the onions with a large can of mushrooms (liquid reserved). Then I add 1/2 cup of flour, 1 tsp salt and the other seasonings to make a roux. I add milk to the reserved mushroom juice to make 2 cups and stir into the roux until thick. Then I add the tuna. I only did this because at the time I did not have any soup on hand, but it was so good I have been afraid to make it any other way. Kudos to you, Virginia!!

Downeast Maine Pumpkin Bread

Reviewed: Nov. 8, 2007
This was good, but not at pumpkin tasting as I would have liked. It also had a little too much spice for me, but that is a personal preference.

Amusement Park Cornbread

Reviewed: May 15, 2006
This recipe tastes more like cake than bread, but that is how I like my cornbread, so it is perfect for me. I just made my in a greased cake pan and it turned out GREAT! Had to adjust for altitude (-2tsp sugar, +2T flour, -1tsp b. powder, +3T milk).

Irish Chicken and Dumplings

Reviewed: May 15, 2006
I love chicken and dumplings and this recipe was easy and SO good! I put my potatoes and carrots in at the beginning and they were still a bit crunchy after the two hours, but they got done eventually. Very yummy!

Wisconsin Cheese Soup II

Reviewed: May 15, 2006
This was really good. I added 1/2 pound of bacon, used bacon grease instead of butter, celery instead of broccoli, and added 1/4 tsp dry mustard. I served it in bread bowls and got great reviews from everyone.

Ramen Coleslaw

Reviewed: May 15, 2006
This is exactly what I was looking for--thank you! I added cooked, cubed chicken breast and left out the sesame seeds. I also used half green and half red cabbage (just to make it pretty). Very good flavor.

Wonderful Short Ribs

Reviewed: May 15, 2006
The flavor of this sauce was great! We didn't really like the meal, but it was because our meat was too fatty, not because the recipe wasn't wonderful. I think I will try it again with chicken breasts or something because the sauce was so good.

Rainbow Pasta Salad I

Reviewed: May 15, 2006
This is great to have on hand for lunches. I think the regular rotini is prettier because there is so much red and green in the other stuff, but to each his own. I also use thawed frozen peas 'cause I like them better, and I use cheddar or colby-jack cheese for color and flavor. I didn't put the whole bottle of dressing on either because it was too strong. Really love the salad, though.

Pork Chops with Raspberry Sauce

Reviewed: May 15, 2006
This has such an awesome flavor! Yum! I used raspberry jam with the seeds because that is what I had and it turned out great! I also doubled the sauce and put it in a bowl so we could put it on top instead of on the plate. I am sure it is good either way.

Peanut Butter Pie I

Reviewed: May 15, 2006
This is my husband's new favorite desert! It is not too sweet and has a great flavor. I used crunchy peanut butter because I like the texture that it adds, so I mounded my measuring cup to make sure I had enough peanut butter :) Also, my husband doesn't like chocolate, so I make one with chocolate cookie crumbs for the rest of us and one with graham cracker crumbs for him. I garnish that one with cinnamon to give it some color. They are both very tasty.

I used one lemon and one orange and I sliced them into thick slices and stuck the cloves (about 20) into the edges of the slices 'cause I thought it was prettier. I also used 3 cinnamon sticks intead of just 1. It had a lot of flavor, let me tell you!

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: May 15, 2006
The name says it all! I have spent my life looking for a great chocolate chip cookie recipe and have finally found it. The first time I made them I didn't have enough butter so I used 1/4 cup melted butter, 1/2 cup butter flavored crisco, and 1 T water and they actually turned out better than the second time when I made them with all butter. I think I might try just crisco next time. I also had to make adjustments for high altitude (+2T flour, -1/4tsp b. soda, -1T brown sugar, -2tsp white sugar). Great cookies, though.

Best Carrot Cake Ever

Reviewed: May 15, 2006
This is a great recipe! I had to adjust for altitude (-2T white sugar, + 1T pineapple juice, + 2.5T flour, -1/2tsp b. soda) because I live at 5,000 ft. I also liked it better when it wasn't cold, so I would recommend frosting it right before serving it. Just a thought.

Banana Banana Bread

Reviewed: May 15, 2006
This is the best banana bread recipe ever--not too sweet and great flavor. I live at 5,000 feet so I had to make some adjustments (+ 2T flour, -1/3 tsp b. soda, - 1T sugar), but the texture was perfect and it was great toasted. I also added 1 tsp vanilla after the bananas. Great recipe!

Sesame Beef

Reviewed: May 5, 2006
This was wonderful! Everyone loved it! I didn't have green onions or sesame seeds and it was still terrific! I tried it with chicken, too, and it made probably the most tasty, tender chicken I have ever had. Yum! I made an extra batch of the marinade and added about 2T cornstarch. Then I threw it in with frozen stir-fry vegetables after the meat cooked and let the vegetables get crisp-tender. It makes a very tasty sauce. GREAT RECIPE! Thanks!
