Chorizo and Lentil Stew

I enjoyed this hearty dish. It reminded me more of a chili than stew. Since I didn't have any celery on hand I used dried celery flakes. I started with 3 cups of vegetable broth and ended up adding about 2 more cups. I'm a vegetarian so I used soy chorizo and added potatoes and kale as others suggested. I made old fashioned cornbread with a little sugar to compliment the chorizo. I would make this dish again.

Slow Cooker Spicy Black-Eyed Peas

I didn't really care for black eyed peas before this recipe. The spicy is what intrigued me. I'm a vegetarian so I used vegetable broth and omitted the chicken bouillon and meat. I added Kale towards the end as suggested by another reviewer. Next time I will add the Kale two hours before time left instead of the one hour in order to make sure it's tender. My meat eating friend enjoyed this spicy version better than her own!! I will cook this again!!
