Mushroom Slow Cooker Roast Beef

Reviewed: Jul. 31, 2012
Amazing as-is (didn't even need a knife to serve it!!), but incorporated a few tweaks to make it Y-to-the-UM. Used 2 lbs of sliced baby bellas and 1/2 sliced white onion. Used 2 packs of soup mix, mushroom and beefy mushroom. Used 3 lb chuck roast and inserted garlic into roast (5 smashed cloves). Put soup mix largely on top of roast and added enough red wine to make it wet, but not wash it away. Used Shiner Bock beer. After done, heated remaining juice in sauce pan with Argo to thicken - served over instant mashed potatoes.

Chocolate Trifle

Reviewed: Aug. 21, 2011
What a fun and time-saving recipe! Followed some of the user recommendations to tweak a bit: Used store-bought brownies (one package iced, one package uniced), used cheesecake pudding instead of chocolate, used homemade whipped cream instead of Cool Whip, excluded sweetened condensed milk and candy, drizzled caramel sauce on each layer of whipped cream. Folks could not get enough of it! Next time I will add graham crackers or graham cracker crumbs to it - super yum!

Strawberry Trifle

Reviewed: Aug. 21, 2011
Delicious! I made some slight variations based on other recommendations: Used pound cake instead of angel food; replaced bananas with blueberries, used homemade whipped cream instead of Cool Whip. Folks could not get enough! Great recipe - thank you!

Broiled Lobster Tails

Reviewed: Jul. 10, 2010
This was my first time preparing lobster and it was an absolute success! The hints in the comments are great. As suggested, I used a combination of butter, black pepper and a pinch of Old Bay Seasoning. I also used the skewers, which resulted in a lovely presentation (both the shape of the lobsters and the "ooh-la-la" factor that shiny skewers bring). Served with corn on the cob (steamed with butter and Old Bay) and lemon wedges. Can't wait to do this again!

Rib Eye Steaks with a Soy and Ginger Marinade

Reviewed: Dec. 29, 2009
This is a phenom recipe. I've been making it for about 3 years and it is a huge family favorite. The only changes I make are to increase the ginger and garlic (there's never enough), as well as the maple syrup (up to 1/2 cup). I also boil the marinade for a great sauce (wonderful on mashed potatoes). Thank you SO much William for sharing this amazing recipe!

Spicy Thai Coconut Shrimp

Reviewed: May 6, 2006
With a few minor changes, this turned out great - it was as good as take out! I increased the red curry paste to 3.5 tablespoons, added sliced red bell peppers with the other veggies, and put fresh basil leaves in for the last 2 minutes. Fabulous!
