Easy Beef Stroganoff

Very easy basic recipe. I season my ground beef with salt, pepper, and red pepper flakes when browning the meat. I use corn starch to thicken the sauce rather than flour so it isn't chalky. I also add minced garlic to saute with the veggies. Lastly, I add 1/2 can cream of mushroom soup to thicken it.

Cajun Chicken Pasta

I liked this recipe a lot to change up dinner a bit. I marniated my chicken with Mrs. Dash ten minute marinade zesty garlic for about two hours (because I had the time). After the marinade I tossed the chicken in the zatarian's creole seasoning lightly, added some tabasco sauce as well. I sauteed the bell peppers, mushrooms, and onion first because if you don't the veggies will be too crisp. Then I cooked the chicken and then mixed the veggies with it to add it to the cream sauce. I did use a little cornstarch to thicken the sauce. It was delish!

Banana Crumb Muffins

This recipes is amazing! I used the butter (which is what the recipe calls for) instead of oil like others suggested and it tasted perfect. I added 1/2 teaspoon of cinammon to the batter as well as a few drops of vanilla extract. When I made the topping, I added in two extra tablespoons of butter and mixed with my hands to get the consistency I wanted and spread the topping on top of the muffin. It made twelve very nicely size muffins. Perfect!

BBQ Chicken Pizza

I really like this recipe a lot and you can cater to your own taste. I used Stubb's spicy BBQ sauce. I marinated my chicken with a little mesquite sauce and seasoned with some salt, pepper, onion powder, garlic salt and red pepper flakes. I also put a couple tablespoons of the BBQ sauce in with the chicken while it was cooking on the skillet. I cut my chicken into cubes before cooking so it didn't take as long to cook on the skillet. I sauteed some white onion and green bellpepper with a little diced garlic (instead of using peppers and red onion). I also only used about 3/4 cup of sauce to spread on the crust. I sprinkled a little mozzarella cheese on top after I layered everyting else.

Awesome Grilled Cheese Sandwiches

I love grilled cheese sandwiches, it reminds me of being a kid. I used shredded cheddar and shredded swiss and left the sandwich open first to melt the cheese for about three minutes(because I used a lot) and then cooked both sides. I used whole wheat bread because that is the only bread I eat. It was great!

Carol's Chicken Salad

This recipe is great and tastes even better the second day. For the chicken breast I used the Tyson oven roasted diced chicken breast to save time. I did add a handful of chopped white onion, left out the grapes and nuts (because I don't like nuts or grapes), added minced garlic instead of garlic powder, added three boiled eggs, and sprinkled a little curry powder on the top. It was delicious!

Chicken Tortilla Soup I

EXCELLENT! This was a great soup and you can cater it to your own taste. I used three chicken breasts instead of two, and seasoned the chicken w/ some fajiata seasoning, salt and pepper before I cooked it. I first sauteed onions and some green bellpeppers and added the chicken to cook. (like others) I addeded two cans of chicken broth (and didn't use water), used cumin instead of oregano. I also added a one sliced jalepeno and some tabasco sauce for some kick. I put all the ingredients in together and left it on the stove on low for one hour and it came out great! I served it with packaged mexcian cornbread it was a big hit!!
