Smashed Sweet Potatoes

Reviewed: Nov. 2, 2007
Easy, and delicious. I didn't have an orange, so I substituted with std orange juice, and it turned well. This will be a fall staple at our dinner table.

Poached Fish with Cucumbers

Reviewed: May 26, 2010
Yum, yum, yum! I followed the recipe except for using Dijon mustard instead of plain mustard. I also went a little heavy on the tarragon (dried) based on another review indicating that it was a little bland. We loved the results, and hope you do, too!

Christian's Crazy Sherpa Potatoes

Clean eating, simple prep and ingredients. The cheese is a fun topping. Reminds me of Marie Callendar's vegetable cheese dish.

Catfish Tuscany

Prepared just as directed, and it came out superbly done. Nice presentation, too. Used the roma tomatoes instead of sundried. It will be a staple in our home. Thanks!

Spaghetti Squash I

Reviewed: Mar. 21, 2008
This was great! I used a can of diced tomatoes (drained) instead of fresh tomatoes (didn't have enough), and added a few sprinkles of red pepper flakes that other reviewers suggested. I also cooked the squash about 10 mins longer than called for in the recipe. Since I was familiar of the crunchiness of the spaghetti squash, it was no problem whatsoever, and easy to scoop out. Enjoy!

Yummy! Only change was the addition of Italian Seasoning mentioned by other reviewers. Served it over brown rice. Healthy comfort food.

Curried Mustard Greens with Kidney Beans

Reviewed: May 2, 2008
I used frozen mustard greens, onions instead of the shallots, and fat-free yogurt (per another reviewer's suggestion) instead of heavy cream. It was still a wonderful side dish...full of flavor. Thanks for a great recipe!

Grilled Montana Trout

Reviewed: May 20, 2008
I felt that the rosemary and lemon flavors melded perfectly with the trout in this recipe. The timing on the grill was also ideal. Easy, tasteful, and a showy presentation. Thanks for a great recipe!

Beef Mushroom Spaghetti

After a few modifications based on previous reviewers' feedback, I added canned mushrooms, sliced black olives, and garlic in the saute. I also used finely-chopped venison instead of ground beef. This dish was delicious!

Following the suggestion of another reviewer, I trimmed the stems down thin. Otherwise, didn't change a thing. It was great!

Deer Chop Hurry

Reviewed: Aug. 27, 2008
I used antelope chops, did not brown the meat first as other reviewers indicated it wasn't necessary, and added some fresh mushrooms. It turned into a ragu-type of dish, so I served it over garlic mashed potatoes. Talk about easy and delicious!

Per suggestions by other reviewers, I cooked the squash in the microwave and substituted Italian Seasonings for the various spices. I used ground venison instead of beef, and added some fresh mushrooms I had on hand. Delicious and healthy!

Absolute Best Liver and Onions

Reviewed: Nov. 21, 2008
Since my BF is a hunter, I make venison liver and onions fairly often from an old, standard type of recipe. This time, I bathed the liver in fat-free milk for appx 6 hours. What a difference! The texture was consistently wonderful from piece to piece, and the taste was fabulous. We couldn't stop eating the liver and onions. Thanks so much for a great recipe!

Coconut Curry Tofu

This is one of my favorite recipes on the website. I'm a carnivore, but this kind of dish could make me a vegetarian. I utilized the helpful hints of other reviewers (drained and seared tofu). We couldn't stop eating this great dish.

Asian Rainbow Trout

Reviewed: Feb. 3, 2009
This is really good. I followed the suggestions of other reviewers and substituted sesame oil and brown sugar for the olive oil and white sugar. I also baked the 1 lb. whole trout in foil in the oven at 350 degrees for 25 mins. It was perfect. I plan to make this often.

This was just what I was looking for...a good topping for spaghetti that wasn't too 'saucy.' Wouldn't change a thing.
