Beef Mushroom Spaghetti

After a few modifications based on previous reviewers' feedback, I added canned mushrooms, sliced black olives, and garlic in the saute. I also used finely-chopped venison instead of ground beef. This dish was delicious!

Smashed Sweet Potatoes

Easy, and delicious. I didn't have an orange, so I substituted with std orange juice, and it turned well. This will be a fall staple at our dinner table.

Pan-Seared Chicken Breasts with Shallots

This was fabulous! I followed the advice of another reviewer and added celery and mushrooms 5 mins before the end. The crunchiness of the celery with the smooth mushrooms provided a new dimension to this recipe. I also thickened the sauce with a bit of cornstarch. I didn't have shallots and substituted a bit of finely chopped yellow onion. I would still consider it a very easy recipe, and good enough to use for a casual dinner party.

Mom's 'Sweet 'n' Sours' Pork Ribs

This will be my new rib standard recipe! The dish turned out wondefully...moist meat, and yummy flavors. I did make the following adjustments: less soy sauce and water, used brown sugar instead of white, and used rice vinegar. The sauce thickened up nicely with the use of slightly less liquids.

Spanish Cod

This was recipe was amazing! I think it would work well with most fleshy fish. I didn't have tomato sauce, so used a can of diced tomatoes which worked out such fine. I also used diced whole tomatoes since I didn't have cherry tomatoes. This will be another staple in my recipe box.

Chicken Breasts with Balsamic Vinegar and Garlic

Creamy Mushroom Pasta

the taste was bland, I added many more mushrooms and there was still just barely enough. The cornstarch works best if you mix it with a bit of water in a cup and THEN add it to the skillet. Otherwise, it just forms into lumps. In my opinion, the recipe as it stands requires too many adjustments to make it worth the effort.
