Zippy Egg Casserole

I thought the crouton flavor was too strong and the dish wasn't spicy at all. I prefer breakfast casseroles with a hash brown or crescent roll base, rather than croutons. It wasn't horrible, but I won't be making it again.

Carol's Chicken Salad

This was really tasty. I reduced the poultry seasoning to 1/4 t. as some others suggested, used shredded Swiss cheese instead of diced and red grapes -served it on croissants. I'll definitely make this again.

Tex Mex Meatloaf

This was yummy. I had less than 1.5 pounds of meat, but I used all the ingredients as listed. It looked soupy but came out tasty; just the right amount of spice. When I make it again, however, I would not add the cheese while baking. Instead, just put the slices on top once it's out of the oven. My cheese slices (that I put on before baking) all burnt so I peeled them off and replaced them once it was out of the oven. Definitely a keeper.

Scalloped Potatoes for the BBQ

These were very good. I sprinkled a little cheddar cheese on before serving, but they didn't even need that really. I also used dried basil and they turned out fine. It's a keeper - love the garlic!

Quick Chicken Divan

I thought this was great, easy and the kids liked it. Next time I'll serve it with noodles or rice. Actually, either one could be added in before baking.

Orange Juice Chicken

This was good. I would add more mustard and some salt next time. I baked 2 chicken breasts in a 9x9 dish and the cup of orange juice didn't cover the chicken and it was fine. I baked it 20 minutes, then another 10 minutes after removing the juice. Served it over white rice.

Garden Veggie Pizza Squares

I think the Ranch dressing really adds to the flavor of the pizza. I had to use two packages of crescent rolls to fill my pan -- one full one and one cut up to fill in the holes. I also added cheddar cheese on top.

Orange Cake

This does taste more like lemon than orange. I may make it again using orange extract instead of the lemon. Very moist and good, though.

This recipe is a nice addition to my Christmas cookie list. I should have doubled the batch, but plan to make more. Should be a lot of fun to decorate. I couldn't keep my 4-year-old from eating them!Yummy.

Ground Beef Enchiladas

Nice change of pace from chicken enchiladas. I used sour cream instead of yogurt, a Mexican cheese mix instead of mozarella and flour tortillas. Turned out well. Husband thought it could use a little salsa mixed in with the meat. I might try that next time.

Pico de Gallo Chicken Quesadillas

This certainly isn't a quick dish, but it's good. It was a little hard to flip the quesadilla when it was full. Perhaps I filled it too much. I used smaller tortillas and ended up with three quesadillas. Will definitely make this again.

Cherry Pork Chops

This recipe couldn't be easier but it's lacking flavor. I have a similar recipe for a pork roast with cranberry sauce that adds dry mustard and ground cloves. Maybe that would spice it up. Probably not something I'd make again.
