Gazpacho Pasta Salad

These ingredients just cry out for some Feta cheese and lots of freshly ground black pepper. The Feta may not be Gazpacho-ish. but it would add a lot of flavor.

This was part of our '09 Christmas Eve dinner - and everyone really liked it. It was served room temp, as well as eaten cold the next day. Seems to be tasty any time but right straight from the oven. The only reason it's 4 stars vs 5 is because it's not quite to-die-for - but it's close!

Jen's Tomato Arugula Bruschetta

This is about a 3+, but it's too much work for an OK recipe. The bruschetta topping sold at Trader Joe's is every bit as good, and factoring in all the time this takes, cheaper.

Avocado, Beet and Arugula Salad with Chevre Tartine

This is a 3+ - quite edible, but for all the work just not worth the effort. The bruschetta topping that Trader Joe's sells is better - factor in your time and it's cheaper.
