Old Settlers' Baked Beans

This has always been a 4+ and a hit at parties. It became a 5 star when I made a double batch for a big party. I tried to stretch it just a bit more to feed everyone by adding a can of Bush's Grillin' Beans Pit BBQ flavor. What a great result! It was even more flavorful. You could probably get a similar result from increasing the BBQ sauce in the recipe. I also used Bush's baked beans instead of pork and beans, since it was on a 2 for 1 sale. Great beans; there literally were only 7 beans left over in the crock pot at the end of the party!

Pumpkin Cake Roll

I used to have trouble with my cake cracking until I tried this trick. I wrap an empty cardboard tube from paper towels with wax paper. I place it at the end of the short side of the cake where I will begin rolling. I then roll the cake around the cardboard tube. It supports the cake so that it doesn't crack.

Jalapeno Bread II

This was a 4+. The only thing keeping me from giving this a 5-star rating is that it needed more cheese flavor and just a wee bit more salt. However,it is just delicious as is. It came out of the bread machine prettier than any bread we've ever made . The texure was lovely. I'm not as brave as my husband with heat, so we used the Mezzeta brand "tamed" jalapenos in a jar. They appear to be seeded and deveined. They provided just the right kick for me, and the jalapeno flavor really came through. We've been very happy with the results we get with the Gold Medal "Harvest King" bread flour, which is what we used for this.

Pork Chops in White Wine

I never use "cooking wine" as I think that a wine labeled with that title is not of high enough quality to drink by itself. If it doesn't taste good by itself, it won't make your recipe taste good. You don't need to buy anything expensive, just something halfway decent. I used a chardonnay I had at home with tasty results.

Eggnog Quick Bread

Delightful and subtle in flavor. I had to hide it after my son pronounced it "totally awesome." I knew it wouldn't be safe from his ravenous appetite!

Cranberry Pumpkin Bread

I added a bit of fresh nutmeg and used 2 eggs instead of the egg substitute. It was moist, wonderful, flavorful and not as heavy and oily as most pumpkin bread.

Celery Wine Baked Chicken

I browned the breasts in my George Forman grill first for a little extra color and flavor, and then I cut the cooking time down to 45 minutes. It was enjoyed by the whole family and was easy to do after work.

Gyros Burgers

I wasn't expecting it to taste exactly like gyro meat, but it does a pretty good imitation for a burger. We ground our own lamb from shoulder chops with the grinder attachment of the Kitchen Aid machine. This allowed us to trim as much fat as possible.

Cream of Fresh Asparagus Soup I

This vanished quickly last night and was loved by all. I only added 1T. of the soy sauce, as I was a little skeptical, but I now think that 2T. would be fine, too. I used 1% milk to save calories, and it was nice and rich.

Basil Pesto Bread Rounds

Fattening but fabulous! I suppose you could use lite mayo, but I hate the taste of it. I served these to my Bible study group, and it created a feeding frenzy. The men climbed over each other to get to the second batch as they came out of the broiler!

Sugar Free Cake

Very nice cake. Don't let the words sugar-free lull you into a false sense of security. It still has 45 carbs per serving - much better than most cakes - but don't get carried away like my diabetic husband and son almost did!

Albondigas Soup I

There seems to be a little confusion over the term "green chili salsa." When I submiatted the recipe, I used the term to mean salsa made with green chilis like Anaheims or jalapenos, not red chilis. I use Pace salsa, mild or medium, or a similar brand. Hope this helps, Kathy

Biscotti Toscani

These were fantastic! Thanks,Thea. Spreading the chocolate on each cookie was a bit time-consuming, so on my subsequent batches, I laid out all the cooled cookeies, cut side up, on the baking sheet. I put the slightly cooled melted chocolate in a cake decorating bag with a plain tip and "squiggled" it over the cookies. It was fast, looked great and there was just enough chocolate on each cookie to enhance the orange flavor without overpowering it.

Cappuccino in a Jar

I put this in decorted jelly jars and gave it to my co-workers for Christmas. It was a huge hit. For my personal taste, I will add just a tiny bit less cinnamon and nutmeg next time. I am going to try to make it with sugar-free hot chocolate mix and Splenda sugar substitute next time for my diabetic son and husband.

Cranberry Gelatin Salad I

This is a "must have" at Thanksgiving. I've found that gently swirling in a cup of sour cream when the gelatin is almost set makes for a lovely marbled effect, and adds a wonderful taste.
