Carrot Cake III

I made this recipe into muffins-substituting 1 cup whole wheat flour, 1 cup brown sugar and 1/2 cup apple sauce for some of the oil. I left out the pecans so the kids could take them in their lunches. They were delicious, definitely a recipe I will turn to often.

I used hot chocolate powder instead of cocoa powder and sugar. It was pretty good, not too sweet. Would have been even better if I had some cream.

Sloppy Joes II

This is one of my favourite recipes. I used two packages of veggie crumbles (one original and one Mexican-gave it just a hint of spice), so I used 2 1/2 the amount of sauce. I too found that it seemed pretty ketcupy so I added a bit of bbq sauce and some worcestershire sauce. I put it in the crock pot, but it only needed about 3 hours on low.

Slow-Cooker Chicken Tortilla Soup

This soup was absolutely delicious!! I did make a few changes to suit our needs (vegetarian). I used 1 can of chick peas, 1 can of brown beans with tomato sauce (both in place of the chicken), a jar of salsa and a fresh tomato (in place of the canned tomato), and veggie broth in place of the chicken broth and water. It was so yummy! The only other thing I changed was to add sour cream. The kids wouldn't eat it because of the spice, but that was ok, more for my husband and myself!!

Vietnamese-Style Chicken Curry Soup

I put this in the slow cooker with chicken breasts. I simmered the sauce ingredients with the onion and chicken all day, then about 1 1/2 hours before serving I added the vegetables (except the potatoes, left them out entirely). I added a couple basil leaves to the broth, and used lemon zest instead of lemon grass because that is what I had on hand. This soup was fantastic, my husband and I loved it!!

Easy Indian Butter Chicken

This recipe is one of our absolute favourites, the kids even ask for seconds!! I did find that cooking the chicken in the oven took way longer than 12 minutes, it was more like 35. So now I sear it in a frying pan with the Tandoori and then add it to the sauce to simmer for 30 mins (which also cuts down on the amount of dishes). I've made it with all the fatty products, as well as 1/2 the butter and 10% cream and it's just as good both ways. I'm going to try the evaporated skim milk to see how that goes next time. The sauce freezes great, so I always double up on the chicken breasts so there is enough for next time.

No Bake Cookies III

I have made this recipe many times, it's one of my favourites. However, I have found it to be a bit finicky. I tried boiling for 1 minute, and that wasn't long enough, so I tried for 2 minutes. Well that was a disaster, the sugar ended up burning on the bottom (even though I stirred plenty), I mixed in the oats and it was soooo dry and crumbly. So I usually boil for 1 minute and then add a bit of flour when I add the oats in. It works for me, and they are worth the experiments!

Crispy Chicken Strips

These were great, my kids loved them!! They were so easy as well. I didn't have seasoning salt so I used garlic powder and some cajun seasoning, turned out great! I probably won't buy frozen ones ever again!!

Chinese Steamed Buns with BBQ Pork Filling

These were time-consuming and didn't taste half as good as the ones from the local market. In fact the sauce was way off. They weren't horrible, and I'm sure it was something I did to make them taste and look weird. Oh well, I'll just keep going to the market!!

These are by far the best sugar cookies I've ever eaten, and the first I've ever made. They had just the right sweetness and texture. I did try to make shapes, not knowing they would spread so much, but they still tasted good! Thanks!!

Zucchini Yogurt Multigrain Muffins

These were pretty good! I only gave 4 stars because they weren't big on flavour really, but they were healthy and they did taste pretty good. My kids 5 and 2 1/2 ate them as well. I did make some substitutions based on what other reviewers said: I didn't have any oats or oat flour so I subbed 1/4 cup ground flax seed, wheat germ and cracked wheat. I used 1/2 cup brown sugar (that may be why the flavour was lacking?), 1/2 cup honey and 1/4 cup molasses. I also squeezed the zucchini. Also, thank you to the reviewer who gave the tip about getting bigger tops on the muffins-I've tried and failed for years to get those big tops!!

Rich and Creamy Tomato Basil Soup

This was pretty good, but there was definitely something missing. My kids normally love tomato soup, but they weren't too pleased with this. It didn't have the tang or sweetness that we were expecting, maybe it would be better with some garlic and possibly something else, I just can't quite put my finger on what that something else might be though. I probably won't make it again.

This was great!! We found the original recipe a little sweet though, so I used 1/3 of the condensed milk, and Ovaltine in place of the chocolate syrup. I make this all the time, a couple times a week usually!!

One Bowl Chocolate Cake III

This was great! I've avoided making cake from scratch for a long time because every time it turns out dry or blah, but this was perfect, just like it came from a box! I iced it with chocolate buttercream icing. I also used coconut milk because my son is lactose intolerant.

This bread is wonderful, I make it all the time. The only change I make is flax seed for the wheat germ, but that's only because for some reason I'm having trouble finding it. This recipe has replaced the store bought bread we bought for years!

This is the best soup!! We love it so much we have it every week! We use tofu instead of shrimp and I add 3 cans of milk instead of 2 and a little cornstarch to thicken.

Slow Cooker Chicken and Dumplings

This was a super easy recipe, and tasted great. I think it needs some additions though, carrots, celery and potatoes were what my husband suggested. We'll try it with them next time. I left out the onions and used chicken broth instead of water. My kids wouldn't eat it but they don't eat anything!

Quick and Easy Brownies

These brownies tasted awesome! I used 1 cup of flour like other reviewers but that was the only change I made. I did have a hard time getting them out of the pan, they weren't crumbly and dry, but for some reason they wouldn't come out. We ate them anyway, they were very moist!

Honey Garlic BBQ Sauce II

This recipe was great, and so much better than store bought bbq sauce. The only things I changed were to omit the butter and add a bit more honey, but that is personal preference. I used it in the slow cooker with ribs and they turned out perfect!
