Old-Fashioned Pancakes

These were delicious! I usually don't like plain pancakes (I prefer them with fruit in them) but we were out of fruit but these were still delicious and I wanted MORE. The batter for us made about 5 medium and 3 large pancakes. I gave it four stars because I think cinnamon is a must in this recipe! I also added milled flax to my batter to give it a nutritional boost. Also I substituted Rice Milk for regular milk because my husband has a dairy allergy. I will definitely be making this recipe from now on!

Grandma's Slow Cooker Vegetarian Chili

This was just OK to me. It was too sweet for my tastes and I like sweet stuff. I was able to find Black Bean Soup at Trader Joes for everyone who was having a problem finding it. I probably would not make this again.

Avocado, Tomato and Mango Salsa

This was delicious! I used 3 large tomatoes and omitted the cilantro simply because I forgot to pick it up and it was still really good... It tastes so good...especially with the sweetness of the mango! I wasn't sure how I'd like it since I am used to a more thin salsa...but this is amazing. Just LOVE it!

Garlic Cheese Bread

Thought this was awesome. I used mozzarella instead of cheddar - will make again & again! I did what the previous reviewer suggested and made the sauce about 30 minutes ahead to let the flavors sit and I was not disappointed.

Baingan Bharta (Eggplant Curry)

I thought this was DELICIOUS!!! I really honestly cant stand eggplant but I've been getting a lot with my CSA and have no other choice but to eat it or waste it. This is so good. I made a few changes because I always do. I used two small eggplant instead of one large. I also cut up (and baked in the oven along with the eggplant) some white potatoes. If I didnt have the potatoes it wouldnt have been very much food. I didn't have any chiles so I used some curry paste I had around to give it a little spice as well as some chile powder. I did not add curry powder and I used Ginger powder instead of ginger since I didnt have any! I love the way the yogurt gives the eggplant a nice sweet taste and I would eat this again and again. We actually fought over the leftovers :) We served it over rice!

California Grilled Veggie Sandwich

This was just awesome. I made a few variations. The main one being that instead of using olive oil I did a combo of balsamic vinegar mixed with brown sugar and brushed on top of the veggies to give it more of a zesty taste. I also used the broiler on the oven instead of the grill, and I added mushrooms to the mix. This is definitely a restaurant quality sandwich and we'll be making it again for sure!

Renaissance Stuffed Mushrooms

Most people said they got excess filling which is true, I couldn't fit all of it in 12 mushrooms... I'd say I made about 24 mushrooms. The recipe was good, I followed it exactly except i didnt put the hot sauce in it. The only thing I would change the next time I make it (and I will make it again) is I wont add so much of the wine, there was too much of the alcohol flavor when I ate them... Otherwise it filled my house with the best aroma. Lovely!

Spinach Stuffed Chicken Breast

I made this dish yesterday after reading the reviews I changed a few things about it. I added about 5oz of Spinach rather than the 10 oz. I took the garlic and some butter and sauteed the spinach in a pan rather than cooking it in the microwave. I also added mushrooms to the sautee which gives it an awesome flavor!!! After I sauteed the Spinach I put it in a bowl and added the other stuff... I also added as much cheese as I felt necessary... along with some Feta Cheese for more flavor. I accidentally bought breast tenderloins instead of what i intended (i think the full breast is way too much for this recipe...) so what I did was pounded them a bit wider and thinner and did it that way. I also excluded the bacon because I don't eat bacon. The butter/garlic that I sauteed the spinach in gave it a nice taste. I've considered marinaiding the chicken in something before using it because like a few people said before it doesnt have enough OOMPF!! Otherwise its a very good recipe and I would certainly make it again!!!
