Juicy Roasted Chicken

Reviewed: Sep. 14, 2008
such a simple recipe, I was so surprised how juicy it turned out to be! Instead of celery, I put a whole head of fresh garlic and a chopped onion in the cavity along with salt & pepper, rosemary and thyme and, of course, the butter. I also rubbed some thyme and rosemary on the outside of the chicken. SO GOOD!

too salty, overcooked, dry. could have been the size of our slow cooker, but the taste just wasn't for us.

Big Soft Ginger Cookies

This is a great recipe! Everyone who has tasted them has LOVED them. One change I made was to use cardamom instead of cloves, only because I don't like cloves. Try it!!!

Annie's Fruit Salsa and Cinnamon Chips

Reviewed: Apr. 1, 2007
I have been making this fruit salsa for a couple of years now. The only difference is that I always switch up the types of fruit. I made it last week for a work pot-luck lunch and used 1 red apple, 1 anjou pear, 1 mango, 1 pineapple and some strawberries. I never add any sugar (it's sweet enough!) and instead use a couple spoons of homemade jam (preferably rhubarb or strawberry) mixed with a bit of lemon juice for a kick. As for the chips, I spray the tortillas with butter spray, top and bottom, cut them into triangles and place them on a cookie sheet. Then I sprinkle them with the cinnamon/sugar mixture and pop them in the 350 oven. I don't know for how long, maybe 10 mins, I just keep an eye on them so they don't burn. I've never had anyone NOT ask me for this recipe! It's so nice and refreshing... and most of all, it's healthy!!!
