About this Cook
I have a husband and two boys in their early twenties who are still living home. My son's g/f just moved in so I'm usually cooking in large quantities so that I have plenty of leftovers. My boys all have good appetities and from years of 'just taste it, just one bite' they have a wide range of things they like to eat. basically they eat anything I put in front of them. They love vegetables so I'm always looking for new ways to prepare them. My son's g/f was a picky eater when she first came here but is beginning to come around and try new things (AND trying to cook!) They're all fun to cook for and have around.
My favorite things to cook
I like to make different things. I have a few old standards but for the most part the menu is varied. That's one of the reasons I like

Fruit Pizza with White Chocolate
I did like this recipe. I'm not a white chocolate person but that's my preference so I didn't knock it down in the star rating. So the only thing I changed was instead of the white chocolate, I just spread some Nutella on there. It was great.

Taco Bake I
I make this recipe but we call it mexican dip. I spread a can of refried beans mixed with 1/4 bottle taco sauce on the bottom of the pan. Refried beans are hard to spread so on the bottom is easier, then the ground beef mixed with an envelope of the taco seasoning (according to directions on the envelope), then cheese, sliced black olives, chopped tomatoes, and shredded lettuce on the top - bake til bubbly at edges. Soooo good....

Balsamic Roasted Pork Loin
Fantastic recipe! The kitchen smelled divine. Had some pierogis and a salad. Great meal. The A&P had a sale on boneless pork loin. I bought a huge one and will be making this again this weekend. Makes great pork sandwiches too!
