Pumpkin Muffins with Streusel Topping

These muffins were amazing. I tried to lighten the recipe by doing only 3/4 C of each of the sugars, substituting 1 C of whole wheat flour for all-purpose and switching amounts of oil & applesauce (i.e. 2/3C applesauce & 1/2 C oil. They were so good... I can only imagine how good they were with the "real" ingredients. I doubled the streusel as others suggested. (so much for light!) I got 24 mini and 12 regular muffins.

Disney's Ratatouille

This was fabulous! I bought a bunch of veggies from a local farmer and this was a great way to use them. I didn't have tomato paste so I used a can of pizza sauce. I also added fresh garlic and basil leaves. So yummy!!

Golden Pancakes

This is a wonderful recipe for getting protein in the morning. The pancakes come out really thin but my kids gobble them up. It is an easy recipe to put in a condiment container to "draw" shapes on the griddle.

Herbed Chicken Nuggets

Groovie Smoothie

Yum! My 5 year old and 10 month old loved this. I used strawberry Greek yogurt instead because it has twice the protein! So creamy!

Favorite Cabbage Salad

This was a very good and simple recipe. I used a bag of cole slaw mix to make it easier on myself and then added crumbled blue cheese for a little extra flavor.

To Die For Blueberry Muffins

These blueberry muffins are amazing and now a family favorite! I used brown sugar instead of white sugar for the topping as others suggested which worked great. I also substituted whole wheat flour for some of the flour to try to make them a little healthier. So good!!!

Jalapeno Popper Spread

This was so good! I made it for a football party and it got rave reviews from everyone who tried it. I made it the night before and just popped it in the microwave when people started arriving. I served it with bread, tortilla chips, and those thick hard pretzels. Yummy!!!

Baked Tortilla Chips

I loved these baked chips paired with Pico De Gallo. I'm currently doing weight watchers and these two make a very tasty, very low point snack!
