About this Cook
I grew up in Colorado and spent much of my childhood outdoors so San Diego is the perfect place for me! A BBQ on the beach or at the pool with my friends sounds like the perfect summer afternoon to me.
My favorite things to cook
I do try to be health concious, I love to incorporate extra veggies into every dish I make and I look for ways to make my meals healthier. However, sometimes I can't resist good old fashioned fat and carbs! I love trying dishes from around the world. Living so close to the border gives me the opportunity to experience authentic Mexican cuisine, which inspires me to attempt a lot of these dishes (they never come out quite the same! lol). I also LOVE pasta, so Italian is definitely a favorite of mine. I recently discovered an interest for Greek food as well.

Jalapeno Popper Spread
This is a great base recipe. It is excellent as is, but it's also very easy to add any spices or flavors you are partial to.

Sauteed Portobellos and Spinach
This is excellent. It works very well as written, but it is also a great dish to add to. There are so many variations, it makes a quick meal easy to put together with whatever you have on hand. I find using fresh baby spinach is even easier than using frozen. I also usually throw in some finely chopped onion or shallots. Thanks so much for the recipe, it has become one of my staple menu items!
