Crazy Cake

This is a very delicious, moist cake. Took advice of previous reviewers and used (iced) coffee instead of water, upped the cocoa to 3/4 C, cut the sugar to 1 cup (I used coconut sugar + 1 tsp stevia powder) and kept the oil per the recipe. Super good cake forget the eggless part! Can't wait to try the orange version. Thanks to the OP for posting the recipe.

Bacon-Wrapped Venison Tenderloin with Garlic Cream Sauce

This was a delicious way to use venison, very tender and med. rare @ 145 degrees. Also didn't have any cream so I just went with sauteed onions and mushrooms (used the bacon grease)over the top. I read to always soak your game meat in 3 or 4 changes of water to get the blood out... it really works to get rid of that gamey taste.

Juicy Roasted Chicken

Real juicy! Started our bird breast side down for the first 45 minutes and then turned it breast side up for the rest to crisp the skin. Added some fresh sage, oregano and rosemary to the cavity with the celery. Scattered small potatoes and baby carrots in the cast iron pan with the chicken. Really, really good. Thank you for posting! It's a keeper.

Cilantro Serrano Cream Sauce

Great idea for cilantro and garlic! I tried it another way for piping into little pickled sweet peppers: I just used one 8oz brick softened cream cheese, one bunch cilantro and 2 cloves garlic with about 1/2t salt. Threw it all into the processor and let it blend til light green, then chilled, scooped it into a ziplock bag, snipped the tip and used it for the pepper filling. Beautiful little appetizer with an excellent taste, really complemented the pickled sweet red peppers. Filled about 30 pepper with some left over for crackers. Thanks for the great idea!

Fruit Cobbler

Easy and fast to make, a big hit with the men and I even used canned peaches and pineapple with most of the juice poured off. Served with vanilla ice cream and it was delish!

Yummy Bok Choy Salad

Excellent way to use up all that garden bokchoy. I used the craisins as shown in the pic. I mixed the dressing up in a jelly jar and chopped the rest and threw that into a bag and took it camping. Gave the almonds and ramen noodles a quick toasting in some melted butter and tossed it all together. As someone said, you could double the bokchoy as the dressing is more than enough for a bigger salad. It was really delicious and held up very well on the camping trip. I will definitely make this over and over again. Thank you!

Whole Egg Mayonnaise

Makes an excellent mayo. Couple tips: Lemon juice for part of the vinegar really brightens it up. Also, if you have a stick blender, put everything into a wide mouth jar, place your stick blender all the way to the bottom and turn it on. Wait for a second until it starts to emulsify at the bottom and then slowly pull the blender towards the top. By the time you get there, you'll have mayo right in the jar that you'll keep it in! No more cleaning out a blender or food processor!

Michael's Foccacia Bread

Excellent, easy to make bread.. everyone really liked it! Added minced garlic and some cheese into the dough as well as on top. So good when it first comes out of the oven. This recipe could easily be tweaked with other additions. A keeper, thanks.

Suki's Spinach and Feta Pasta

Really excellent recipe that is easily tweaked for personal taste. I followed everything with a few additions that we like: Cooked 1/2# bacon and used the grease for the onions/garlic instead of olive oil. Swapped finely chopped broccoli for mushrooms. Garnished with crumbled bacon, lots of fresh basil and freshly grated parmesean cheese. Finished it all off with a squeeze of fresh lemon juice. Really colorful and delicious and I was requested to 'please' make it again. Definitely putting this into my 'easy' supper rotation.
