Orzo with Caramelized Mushrooms and Wilted Spinach

This was delicious. I knew we'd love it, as we love all the ingredients. It came together very well. I didn't leave the orzo in the pot of water, I just drained it and rinsed it with hot water and when ready, just dumped it back in and it was great. I did add a small red onion to the mushrooms and let that caramelize, too. After I took the picture, I tossed it again so the cheese went throughout and it was delicious. I doubled this and it served 6 with only a tiny bit left over that I hid away. ;)

Chipped Beef Ball

Tried, true and a classic recipe! :) I followed this recipe as written other than I rolled in my own fresh chives. It can be thinned with sour cream, buttermilk or mayo in place of the milk, too, if desired, and it's great with green onions instead of regular onion. Thanks for the reminder and the great addition to the snacking holiday weekend!

West Coast Trail Cookies

Delicious! :) After talking with westcoastmom, I changed this up slightly just by using pine nuts in place of the sunflower seeds and white chocolate chips in place of the milk/semi sweet. I used raw sugar instead of white and I didn't press them down, at all. Wonderful texture and flavor. :)

Hard Steamed Eggs

I have used the steam cook method for years, so this one is an easy one to rate/review. I have never done the crack then back in the water, thing, but I did this time for deviled eggs, just to say I did, and it was fine. I'm not sure I noticed any difference, but it certainly didn't hurt anything! :) I always use our own free range fresh eggs and I do keep a dozen back for at least a month before trying to make them for something I want them peeled "pretty" for. This method works well for those, too.

Shepherd's Pie on Crack

I made a few changes with this, but most was just in preparation. I didn't do the puree, I just added the carrots/peppers/onion to the meat mixture and I omitted the milk in the meat mix and I used only half the wine. I also used frozen, rather than canned peas, 4 jalapenos along with the sweet peppers and I used fresh herbs. I used 3T of Worcestershire sauce and 2T of beef base. And, finally, I mixed the green onion and shredded cheese in with the potatoes/cream cheese/dill, after they had cooled slightly, rather than add the cheese as another layer. I baked this in single serve ramekins and there was enough to serve 8 healthy appetites along with a green salad. Comfort food that doesn't disappoint!

Jan's Chocolate Chip Pound Cake

As expected, this was delicious. I made these in a Wilton's mini loaf baking pan and they baked for 30 minutes. I used raw sugar rather than granulated, too. Also, I only had regular sized chips, so, I lightly sprayed them with no stick spray and tossed them with a lil flour before adding them to the batter. As you can see in my pic, the chips didn't sink! :) The flavor of this was great. Not overly sweet or chocolaty which, for us, is a real winner!

Swedish Vegetable Salad with Shrimp

A very different variety of ingredients than we are used to... but, it worked! I didn't use the asparagus, and I used fresh dill, but those are the only differences. Thanks for adding this on my thread, when I asked for summer side dishes/salads. :)

Bellepepper's Orzo and Wild Rice Salad

Delicious salad. I made this for lunch and it was finished off with sandwiches for dinner. :) I did use raisins instead of currants, because I hadn't replaced my currants, yet, and I used cashews and pecans rather than almonds, because we aren't really almond fans. Thanks for a great summer recipe, Belle!

Macaroni, Pineapple & Ham Salad

Very good and crisp summer lunch salad. :) The changes I made were minor... my own cherry tomatoes, quartered, fresh pineapple I chopped the heck out of and my own Italian style dressing. Oh, and penne instead of macaroni cus I don't have macaroni on hand. Thanks for suggesting this, Jodi! :)

Olive Bar Marinated Veggie Salad

Cut this recipe in half and made it for lunch, today... I ate half of it, myself. :) My changes were minimal: I used my own dressing, left out the beans, and used cubed fresh mozzarella rather than the small marinated balls, because that's what I had, and my own ripe tomatoes instead of romas. :) Great, fresh tangy recipe, thanks Saveur!

Rosemary Garlic Mashed Potatoes with Manchego Cheese

Yum! :) Okay... I steamed as directed, and used baby reds, purples and yellows. I opted not to peel. For me, the rosemary in these was perfect because it wasn't over powering. I always cook with whole sprigs of that herb, then remove them because biting into a bit of rosemary can ruin a dish for us. The manchego cheese was wonderful. Thanks, Christine.

Nutty Spinach Salad

Made this for lunch, today, and it was really good. Light but filling. I don't use ketchup, really, so I did sub a lil tomato sauce and with the spices and flavoring, it was good. I also subbed salt and pepper cashews for the peanuts, per Carousel Lady's okay. :)

Amazing 'Pizza' Pork Chops

Easy and delicious...as you can see from my photo, I made sandwiches out of them on whole wheat buns. I did use dried Mexican oregano, cus that's really the only kind we like... but, the basil was fresh from the garden. Thanks CNM!

Summer Strawberry Buckle

Delicious! :) I didn't use cake flour and subbed buttermilk and it did fine, other than I had to bake mine longer... and I swapped the cinnamon and nutmeg amounts for personal taste. Served it just barely warm with vanilla ice cream. :) Thank you, Cyndi!

Tuna Macaroni Salad

Very basic, easy, tasty salad. This is like tuna salad with pasta, or a cold tuna casserole...either way, it's a nice recipe. I don't buy sweet relish, for personal taste, so I used dill relish, instead. I also added a couple eggs and colby/jack cheese rather than cheddar. Nothing to complain about, here. It delivers as expected. :)

Fresh as a Daisy Spring Salad

Nice fresh, bright salad. The dressing was nice, but, honestly, I liked it better before the sour cream. It was beautiful and just crisp and light. I didn't think the sour cream added much to it. I used a very high quality olive oil for this, and I think that is a key. Daisies, around here, get gobbled up before they leave the yard, so the lil yellow and white ones were out..but, I still added some live, big, colored blossoms for the character. I also used cherry tomatoes, out of preference.

Not Your Mama's Tuna Casserole

I used fresh spinach and my own recipe for cream of mushroom soup, for taste preferences. I doubled the recipe and used 14oz of fresh baby spinach and 4 6oz cans of tuna. I also used the full dozen eggs and it wasn't too eggy for us, and we don't even like egg salad. :) This was gobbled up by 6 people with none left over. I did add some fresh ground pepper and a lil salt.

The great thing about this recipe is, there is always room to add, but try not to leave anything out! It's sometimes tricky to get JUST right, but, when you do, you will always remember it and you will make it again, and again!

My Fresh Cranberries with Orange, Lemon, and Rum

This was fantastic. :) I asked for a recommendation for a personal recipe in the Recipe Buzz, and this was one of the few that came up. I picked this one specifically cus of the addition of rum. I followed the recipe exactly other than using half the sugar, and adding 1T of honey. I also chose to not process about 1/4 of the sauce, leaving a fair number of intact berries, for a great texture. Thank you, Saveur, for the recipe!
