Onion-Crusted Meat Loaf with Roasted Potatoes

My family really liked this. The only thing I did differently was to mix an 8 oz. can of tomato sauce together with the tomato soup before topping the meatloaf. I'm glad I did, because it would've cooked down too much to give the potatoes any sauce I think. Plus, the tomato soup alone is a bit sweet for my taste. Just a side note, we have two teenage boys, an older girl, my husband and myself. This was *just* enough to feed us. If one of the boys had been really hungry we wouldn't have had enough. Next time I will use 2 lbs. of meat.

Easy Olive Martini Chicken

This was very good and smelled great while I was cooking it. I changed the directions a tiny bit and added the garlic while I browned the chicken. I also took the advice of others and doubled the amount of sauce. I served this over penne pasta and it was a hit. The kids ate it without a complaint even though the sauce has a strong flavor. One of the kids wouldn't eat the olives, but they were easy enough to pick out. Thanks for the great recipe!

Cabbage Hamburger Bake

We love cabbage rolls in our family, so I thought this would be an easy substitute. I changed the recipe a bit by cooking my rice first in beef broth and adding it to the hamburger before layering. I think it was a nice addition. The taste was alright overall. My boyfriend said it has "potential". I think next time I try this I will use tomato sauce rather than the soup, as it seemed to give a sweet taste I didn't want.

Green Pozole

I made a couple of minor changes to this recipe... I left out the dried pasilla chile part, mainly because my kids aren't fans of super spicy and I didn't want to put another 1/2 hour into the prep time. I also subbed 2 lbs of pork instead of using chicken. I've always had pork posole and thought I'd stick with that. I cut up boneless pork chops because they were on sale, and they worked great! Otherwise, I followed the recipe and it was a big hit. I'll definitely be making this again.

Ramen Cabbage Salad

This is a quick and tasty recipe. I use bagged coleslaw mix in place of the cabbage and added green onions and chopped celery to mine. I also like the flavor better if I use sesame oil in place of the vegetable oil, but it is good both ways.

Mom's Italian Beef Barley Soup

I thought this was a tasty and easy homemade soup. Like others, I added carrots and celery, and a bit more seasoning (Italian seasoning) because that's how I like it, but felt that the flavor would've still been great without them. It was delicious with a warm loaf of French bread.

The only change I make to this recipe is to use beef tritip instead of pork. The marinade is excellent for this recipe and we use it on everything now. Really good on chicken too. We even use it as salad dressing!

Spinach Quiche

This was so easy and good! I subbed fresh spinach for frozen (I just sauteed it down in olive oil) because that's what I have. I also added some chopped sausage to make my meat eaters happy. It was a big hit.

Tortellini Soup

I'm giving this 5 stars for the ease of the recipe and the great base it provides. Like everyone else, I tweak it a bit. I use chicken broth, and add whatever leftover veggies I have in the fridge: carrots, celery, onion, bell pepper... I always saute the veggies with garlic first too. This is a big hit at our house, especially if I have a fresh loaf of bread to eat with it!

Kalua Pig in a Slow Cooker

This was perfect! The smoky flavor was just right, not too much. I used two 2 lb pork shoulders, so I flipped them after 6 hours and then shredded the meat after 10 hours. I left it to soak up the juice for 2 more hours and served. 12 hours was just right. Thanks for the easy recipe!!

Easy Caramelized Onion Pork Chops

This is a very good recipe for pork chops. I am always afraid of them turning out tough, but these came out tender and had great flavor. The only things I will do differently next time will be to add more onion (one onion cooked down to about 4 tbsp) and less water. It took FOREVER for it to evaporate. I ended up draining off part after 50 minutes of cooking. Thanks for the great recipe!

Irish Beef Stew

This was very good and smelled great when we walked through the door! My only changes were that we didn't add parsnips or potatoes and ate it with mashed potatoes instead. I did add quite a bit of salt when I added the thickener, as it wasn't salty at all. Definitely a keeper!

Artichoke Chicken

This was pretty tasty, but very rich. You have to really like artichokes to enjoy this one! I added bread crumbs to the top, but otherwise made it as directed. It was great with linguine. I ate kalamata olives with mine, to make it feel more Greek.
