Colleen's Slow Cooker Jambalaya

My family seemed to enjoy this recipe, and since I'd done all the chopping the night before, getting it started before work was easy. I was a little bummed that the chicken still turned out a bit dry, even though there was plenty of liquid... Maybe I should've turned off the pot an hour earlier? I'll make this again.

Green Pozole

I made a couple of minor changes to this recipe... I left out the dried pasilla chile part, mainly because my kids aren't fans of super spicy and I didn't want to put another 1/2 hour into the prep time. I also subbed 2 lbs of pork instead of using chicken. I've always had pork posole and thought I'd stick with that. I cut up boneless pork chops because they were on sale, and they worked great! Otherwise, I followed the recipe and it was a big hit. I'll definitely be making this again.

Spicy Grilled Shrimp

This was a great, quick, delicious recipe. I doubled the sauce so the shrimp could marinade for about a 1/2 hour while I fixed up the rest of the dinner. It was pretty spicy, but so good! I cooked them on a cast iron skillet on the stove, perfectly grilled and so quick. I thought the amount of salt was fine, but I might cut the cayenne back a bit for personal preference. I did also give them a quick shake of Old Bay, but they would've been just as tasty without.

Spinach Quiche

This was so easy and good! I subbed fresh spinach for frozen (I just sauteed it down in olive oil) because that's what I have. I also added some chopped sausage to make my meat eaters happy. It was a big hit.

Tortellini Soup

I'm giving this 5 stars for the ease of the recipe and the great base it provides. Like everyone else, I tweak it a bit. I use chicken broth, and add whatever leftover veggies I have in the fridge: carrots, celery, onion, bell pepper... I always saute the veggies with garlic first too. This is a big hit at our house, especially if I have a fresh loaf of bread to eat with it!

Onion-Crusted Meat Loaf with Roasted Potatoes

My family really liked this. The only thing I did differently was to mix an 8 oz. can of tomato sauce together with the tomato soup before topping the meatloaf. I'm glad I did, because it would've cooked down too much to give the potatoes any sauce I think. Plus, the tomato soup alone is a bit sweet for my taste. Just a side note, we have two teenage boys, an older girl, my husband and myself. This was *just* enough to feed us. If one of the boys had been really hungry we wouldn't have had enough. Next time I will use 2 lbs. of meat.

This is a quick and tasty recipe. I added green onions to mine. I also like the flavor better if I use sesame oil in place of the vegetable oil, but it is good both ways.

Italian Wedding Soup I

Mom's Italian Beef Barley Soup

I thought this was a tasty and easy homemade soup. Like others, I added carrots and celery, and a bit more seasoning (Italian seasoning) because that's how I like it, but felt that the flavor would've still been great without them. It was delicious with a warm loaf of French bread.

Creamy Chicken and Wild Rice Soup

This was pretty good. It was a bit too rich, and super thick the next day when I reheated it. I added some milk to thin it out, and actually preferred it day two.
