Quinoa Tabbouleh

I loved this recipe! So easy to make! I am a big fan of tabbouleh made w/ bulgar so I was especially happy to find a recipe that used quinoa, a " super grain". The FoodLovers Companion says its a complete protein b/c it comtains all eight essential amino acids. And its an especially colorful dish w/ all the veggies in it. I took the seeds out of the cukes and did the same w/ the Roma/Plum tomatoes that I used, so the dish would not get watered down. I also added more lemon, EVOO and salt. Next time I may add a dash of cumin but all in all this dish didnt need improvement, other then a slight adjustment of seasoning.

Coconut Pumpkin Nut Bread

My all time favorite pumpkin bread recipe, hands down! I have been making this recipe since the Fall of 2000. It comes out so moist and perfect every time. Its a failproof recipe. I use sweetened coconut flakes b/c I can not find unsweetened. It IS a sweet bread. I find eating it with a spread of cream cheese helps balance it :)

Cha Cha's White Chicken Chili

Wow, after many failed recipes for a white chicken chili/soup, THIS is it :) I read all of the reviewers comments and made some *slight* adjustments. Since many commented that it was spicy, I tried to tone it down a few notches by 1/2 tsp of chyenne pepper, used approx 6 slices of nacho style jalepeno, diced, along w/ the 1 can of green chili peppers. It was still very spicy/hot but just enuf for my taste :) I thought the recipe was a little thin, as I think of chili as being chunky....So I pureed one can on the beans( Great Northern), and then using my stick blender I gave the entire pot a few pulses, to thicken up the "soup". I also cooked it on a low simmer for 1 hour, again, to thicken up... I ended up w/ a hearty soup texture, which was perfect :) I also added a big dollop of sour cream which offset the spiciness perfectly ...

Sweet Restaurant Slaw

I cut the sugar to 1/3 cup and used 1/3c reg Hellmans,and 1/3 Lite Hellmans mayo. I shredded in 2 carrots b/c i like carrots and makes it prettier. Also added a dash of celery seeds. Gotta love it when people who normally do not like cole slaw go for 2nds!

Slow Cooker Reuben Dip

Enjoyed this recipe! I chopped the sauerkraut w/ kitchen scissors to make it less messy/stringy to eat, saved the drained sauerkraut juice to add some of it back in to moisten/thin the recipe after a few hours cooking in the crockpot. I used low fat cream cheese, Boreshead Pastrami from the deli and added " Publix's Deli Mustard w/ Horseradish", a few squirts, to add a bit more flavor. I found that it filled a 2.5 qt Rival Crock Pot to the top. I will definately use this recipe again and again...

Sweet Potato Oranges

I really enjoyed this recipe! I cut big navel oranges in half...easy to pull out the flesh...I cut back on the sugar to 1/3 c and next time I will cut back a little more. Also found the sugar topping too much, to over the top sweet plus a waste of 1 cup of pricey pecans. Next time I will sprinkle a little brn sugar on top and place pecan halves or sprinkle chopped pecans on top. They present beautifully and I am making this again for Easter Dinner.
