Spam and Cheese Casserole

Very good. Don't see any reason to change it - can always add spices at table, if desired. Picky girls in family ate this right up. No good as a leftover, anyway.

Bread Pretzels

Was looking for a kid-friendly recipe where I could bring all the ingredients to school and we'd be successful. Did not want to bother with the boiling, as we didn't have time or facility to do so. Very pleased with results - several parents at our event requested the recipe. Definitely better when making only 6 pretzels per recipe. We made 7 recipes for 50-60 people, and all enjoyed the experience.

Microwave Mochi

My 14-year-old daughter needed a challenge for her 4H Microwave project. This fit the bill. She studied a bit of Japanese culture, too - always beneficial. Personally, I LOVE to eat these!

Pork, Broccoli and Rice Casserole

My husband raved for several minutes - he rarely does this! I have leftover pork often, so I'm sure this recipe will become a staple. Cleanup was easy too, as even a double batch was eaten up by my large family (5 kids and two parents at home for this meal).

Spiced Plum Bread

14-year-old daughter loved this bread, even though none of the kids ate the canned plums for lunch. (This is why I tried to find the recipe in the first place.) Didn't put in nuts, but otherwise followed the recipe. Definitely will use this over and over again.

JELL-O® Pudding Eggs

Rich is an apt description. My 9-year-old daughter received a blue ribbon from the 4H judge. She is very proud of being able to do the recipe nearly by herself. Since we raise chickens for eggs, this seemed like a natural dessert for her to learn. Using our egg-shaped specialty muffin pan helped tremendously.

Scottish Pudding

My daughter was awarded Reserve Champion from the 4H judge for Microwave Cooking with this recipe! And, we all love to eat this dessert, too. I drizzled half & half over the dessert at home; otherwise, the recipe was made just as directed.

Children's Gingerbread House

Used as a 'building' activity for Destination ImagiNation (1st graders). They learned a lot. Even the girl that doesn't like gingerbread ate a piece afterwards! I made a batch and a half (which made two sheets), and I used Watkins' Lemon Extract instead of lemon zest (thumbs way up on taste!) The team & I learned that fresh gingerbread is too crumbly - you DO need to wait more than one hour after baking to assemble:). But, my aim was also to have them cooperate and figure out a way to cut their own shapes without wasting much gingerbread - mission accomplished. And the other teams were very excited to eat our leftovers. Definitely will use this recipe over and over again.

Old Fashioned Oatmeal Cookies

These are just the recipe I was looking for. Of course, it seems that every recipe I see on this site has been altered in some way. My alterations: didn't have enough raisins, so supplemented with Craisins (r); left out walnuts; baked at 350 instead of 400. I have found that lower temp, longer time makes for a better, softer cookie. I'm glad I printed this recipe out - they're great!

Crackle Thins

I have been looking for inexpensive crackers for the snacks in my children's lunches for quite a while. These crackers are just what I am after! I had only tried a half-batch, and I think that only makes about 4 servings, not 8. Taste? - even my picky eater thought these were bland. I am going to keep this recipe, but I will add more of each flavoring. Finally I have a recipe for that chili oil my kids gave me for Christmas!
