Easy Tilapia with Wine and Tomatoes

This is the second time I made this in 4 days. My husband and I love the flavor. The only thing that I changed was to reduce the wine to 1/4 cup to lower the liquid level in the pouch. Great flavor and moist tilapia. Love it!!

Zippy Shepherd's Pie

We loved this. I made as written except for changing out some vegetables. No peppers or peas & carrots but I added mushrooms. Tomatoes are hard to come by in the winter so I drained a can of fire roasted tomatoes and used that. This recipe has a depth of flavor that I have never had in shepherd's pie before. I was scared of the curry and shouldn't have been. It just adds the much needed kick that shepherd's pie needs! We will be making this every time we have leftover mashed potatoes.

Salsa Cube Steaks

Very tasty recipe! The most tender cube steaks I've ever had. I did not add any water and I am glad I didn't. There is alot of liquid after cooking. I may not add extra onion or pepper next time. A nice change to the usual cube steak recipes.

Spicy Cucumber Soup

I like the flavor of this recipe. I followed the portions except for halving the cayenne. I don't consider myself a wimp, I enjoy spicy food. This recipe is still just too spicy for me. I can't imagine trying to eat this as written.

Garlic Alfredo Tilapia

Loved this! My husband gave it rave reviews. Definitely not diet food. I made the tilapia as written. For the sauce, I doubled the butter and garlic and used 1 jar of alfredo sauce because I served the sauce over penne and asparagus also. Great dinner!

Stuffed Pepper Soup IV

Delicious! I did change to beef broth and used a different spice blend...only because I hate sage and thyme! I used oregano, basil, garlic and red pepper flake for a kick. The base is a fantastic recipe to change according to your personal preferences! From other reviews, I have personally kept the rice in a separate container to be added per serving as I will eat this over a few days. You won't be sorry if you try this one.

Caprese Pasta Salad

We really enjoyed this recipe. It's a great way to make a Caprese salad become more hearty. I used walnuts and it was still delicious. Make sure to use smaller garlic cloves. I used a large clove when I cut the recipe in half and it really overpowered the other flavors.

Skillet Bow Tie Lasagna

I'm rating this as written. It is just way too bland for us. I have made some changes that really spiced up the flavor. I used 1/2 ground beef and 1/2pork sausage. For spices I used 1T italian seasoning, doubled the garlic and then added some red pepper flakes and basil flakes. I added fresh chopped parsley at the end with the cheese. For liquid I used half beef broth, half water. Finally, because we wanted it to be like real lasagna, I also added some shredded mozzarella with the cheeses. It is definitely not a light meal but a great replacement for the hours normally spent making traditional lasagna.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

Excellent use for vegetables from my garden. Light and perfect for a summer side dish or a vegetarian dinner. I made the dressing as written and saved half for leftovers or to use elsewhere.

Chicken Enchiladas I

We absolutely loved this recipe! I only made 2 changes. I used black olives instead of peppers because the husband hates peppers. Also, following previous reviews, I put the taco sauce in the filling and used one can enchilada sauce as the topping, omitting the tomato sauce. I would recommend not adding any salt. The ingredients have plenty of salt already. I found it a bit salty but my husband and our friend had no issue with it, so it's up to your personal taste. This was absolutely delicious with a green salad and a serving of mexican rice. Thank you so much for the recipe. I will use it again in the future.

Cheddar Baked Chicken

My husband and I loved this recipe. It was quite a mess to prepare, but worth the work! The rice cereal gives a nice crunch to baked chicken and the cheese just puts the taste over the top. The chicken breasts I used were huge so I had to adjust cooking time but a meat thermometer gets it right each time. I will recommend highly.

One Dish Chicken Noodles

My husband I both enjoyed this. We omitted the peas and added salt, pepper and garlic powder to the chicken as it was browning. This is a wonderful quick, weeknight recipe that you can prepare with items from your pantry. I will definitely add this to my go to list.

Tomato-Mushroom Soup

I really enjoyed this soup. I added some red pepper flakes for a bit of a kick and used low sodium broth because I generally find beef broth too salty for my taste. The wine gives a wonderful, rich flavor. This is excellent by itself and would be a great starter for a beef meal.

Pasta Pomodoro

This was great! I put in 1/2 can of broth and 1/2 lb of pasta. It was light and delicious. The vinegar gives a nice flavor to the sauce. Delicious.
