Basil Chicken over Angel Hair

Delicious! I used fresh tomatoes from our garden - MMM. I used dried basil (since thats what I had) about a couple tablespoons. Otherwise no changes.

Pollo Fajitas

I was in a rush to make dinner and grabbed the first fajitas recipe that looked good. I used pre-cooked chicken strips (because of a time issue) and heated them in a pan with what would have been the marinade plus some cumin, along with the onion and sliced RED bell pepper. Turned out pretty good, though I bet they'd be even better if the chicken was actually marinated!

It was okay. Really it's just baked vegetables with a little cheese. There wasn't enough fluid/sauciness to have it over noodles like we tried, and it was just really plain by itself. Needs some more seasoning.

Marie's Easy Slow Cooker Pot Roast

MMM... this pot roast is so tender and juicy it falls apart. The flavor is wonderful. I've used all the veggies or left one out if i didn't have it on hand, they taste great too. If you don't have 8-10 hours you can shorten that by cooking on high part of the time. It's best when cooked on low for the whole time though.

Broccoli Cheese Soup VII

Great recipe though I made a few changes to make it even better. I added an onion (cooked with the broccoli), used a 16 oz bag of frozen broccoli. Cooked the veggies with the boullion cubes (2). Mixed the flour into some of the milk before heating to prevent lumps, used 1/2 and 1/2 instead of cream. Added 2 cups of mild cheddar cheese. Very Yummy!

My Mother-in-Law's Cheese Sauce...ssshh Don't Tell Her

It was pretty good. I had to add tons more cornstarch than the recipe called for, and let it cook forever and it was still runnier than I'd like. Taste was fine though.

Exquisite Pizza Sauce

This sauce really is exquisite! I used tomato sauce instead of the paste and water and omitted the optional anchovie paste. Wonderful stuff, will definately make again.

Butternut Squash Soup

I like many reviewers roasted the squash in the oven first. Cut in half and roasted with cut side down on a greased baking sheet for about 40 min at 375. Cut down the cream cheese. I've added red peppers (sauteed with the onions) to the soup as well.

This was my first time cooking with molasses, and maybe I'm just not a huge fan but I thought its taste was a little overpowering, I'd cut down the molasses then they'd probably be just right.

Chicken Jalfrezi

I fried the spices first as suggested by another reviewer, and omitted the ghee (because i didn't have ghee and forgot to sub butter at least). Otherwise I prepared as written. I will not let it simmer uncovered for as long next time to have some more liquid remaining. Served over rice. Yummy!

Monterey Chicken with Potatoes

Delicious. Changes: I marinated the chicken in a little lime juice some salsa and cilantro for a short time. Didn't use so much butter on the chicken. Cooked at 425 for 20 min then down to 375 for about another 20 before adding the cheese mixture.
