Lowcountry Shrimp and Grits

I have tried several shrimp and grits recipes and i have enjoyed this one the best. Putting the shrimp in with the grits is a lot better than ladling it on top by a bunch. I don't care if this does not make it authentic it is a lot better. I cook this recipe for friends at work and I have been asked what my secret was to make this so good.

Caramelized Red Bell Peppers and Onions

My wife is not a big onion eater...she polished off the leftovers the next day...excellent side dish...what i liked best about it is the color it adds to a plate and eases of preperation. adding the wine is a definite must also.

Very good recipe with only one addition. I got this tip from a middle eastern cook book...I guess they don't have thgose special california egg plants either. But they recommended mashing the egg plant after u get it out of the oven and peel it. Which also means u want to use a little more eggplant to make up for juice loss and more olive oil to taste.

Sweet Potato French Toast

Just made these this morning, wife's appetite not too good this morning..but I made her try a bite...5 minutes later she was in the kitchen fixing a plate. Need I say more? The microwaving suggestion makes this recipe easier and quicker...and i probably will also play with the spices some. Thank you Laurie
