Grilled Bacon Jalapeno Wraps

Reviewed: Sep. 3, 2011
My daughter has been making these for about a year, perfected the technique.... use light cream cheese, it does not melt much and saves a few calories. we don't like them precooked, keep them a little crisp to the bite. Use regular bacon, not thick sliced, a whole slice and try to leave the end on the bottom so it stays wrapped. Put them on an upper shelf of a hot grill and put a pan under to catch the grease!!! saves using the water bottle to put out fires! and make more than you think you;ll need - they will disappear!

Hot and Spicy Pecans

Reviewed: Feb. 16, 2009
Absolutely loved these! Sprayed with butter pam instead of real butter, then moistened with worchestershire before sprinkling the powdered spices on. Spicey but not hot, lots of raves at the potluck! will make again and again! maybe try with almonds, but the pecans were wonderful

Made as directed except: used a can of diced tomatoes, store bought polenta and I used Venison Italian sausage [was looking for a way to use up a 'gift']. WOW!! I can't count the times my husband complimented this dush while eating it! Leftovers even better! Not spicy, but full of rich flavor.

Cranberry Dip

Reviewed: Dec. 19, 2008
Really good, easy to do on the stove, takes about 10-15 minutes. 3/4 C sugar works well. I spread the softened cream cheese on a pie plate and pour mix over, more colorful than stirring it all together.

Holuski

Reviewed: Dec. 14, 2008
This is a pretty traditional recipe, my mother-in-law was slovak, the family all grew up on holushki, still a special reunion trest! At home, we throw in sliced smoked sausage for a complete meal, Norma would never have allowed that, but it's easy and yummy! Definately saute the cabbage and add the onions, it adds a different dimension to the dish! We always use the kluski noodles or frozen Reames, they hold up well and add a better flavor than egg noodles to us.

Zucchini Nut Cookies

Reviewed: Jul. 26, 2008
I could taste the clove too much, followed other's advise and added some icing, helped alot! Loved the use of zucchini in the spice cookie. I used 1/2 oatmeal instead of the flour,,, not sure if that was my problem, but they were very very soft, could not be picked up in one piece till they set out for 24 hours uncovered.

Cucumber and Blue Cheese Salad

Reviewed: Jun. 11, 2008
Made as written, colorful, crisp and easy. Needed a little something, tried salt and pepper, made a big difference. Not sure how well it would keep, did fine. I drained off the extra juice the next day and enjoyed it again!

Jalapeno Popper Spread

Reviewed: Dec. 26, 2007
Would really give it about 4.5.. very easy to put together, used a whole small can of chopped chilis, 2 fresh jalapenos chopped finely. put in the 1/4 Cup parm cheese and served warm. Most people loved it, a few thought it could be hotter, but that would scare others away! Served with wheat crackers and triscuits. YUMM!

Cranberry Salsa

Reviewed: Nov. 21, 2007
I would like it with more kick, but the other 20 people at the party pronounced it wonderful, gave out the recipe to several people... Only added 1/2 c sugar. Loved the tang of the lime and cranberry with the sweet/spicy flavor. Great with those scoop chips, holds more salsa!

Zucchini Crisp

Reviewed: Aug. 31, 2007
I have been making a similar recipe for a couple years now, everyone loves it! A couple suggestions: I run the zucchini quarterd lenghtwise through my slicer, looks like apple slices that way. My recipe calls for soaking in the lemon/vinegar mix for 30-45 min then draining before adding sugar. I think that will help those who thought the lemon jc was strong. just about any proportion of juice and cider vinegar works well, I don't get hung up about it, but I do drain them.

Spicy African Yam Soup

Reviewed: Jun. 29, 2007
Awesome, healthy dish! My husband had a bad dish many years ago with peanut butter in it and has avoided it ever since. He could not rave enough about this soup! I rarely ever saute ingredients first, so did not this time. We used brown rice, substituted another white bean for the garbanzo, otherwise followed recipe. Unusual and very good! will make again for sure!

A wonderful soup, we substituted soy sauce as we didn't have the tamari, also changed to another white bean as garbanzo's aren't our favorite.. Great taste, froze the leftover to take to lunch, was even better 2 weeks later! hearty, spicy and a little sweet.. yumm

Baked Spaghetti Squash with Beef and Veggies

Reviewed: Dec. 23, 2006
I'm sorry, no hamburger casserole is 5 star dining. This was tasty, a more nutritious hamber helper type meal. I mixed it up early in the day an popped it in the oven. Made for easy dinner time. Taste was good enough, just not a spectacular dish.

Danish Christmas Red Cabbage

Reviewed: Dec. 20, 2006
I have made this for years, as mentioned, excellent w/any plain meat, pork, roast, poultry, etc. You can adjust by keeping the proportion of sugar/vinegar. I always use cider vinegar and add some cloves. First came across the recipe as a german dish to serve w/Saurbraten. I like it better than the thick sauced ones you see in some restaurants. The flavor is bolder!

Sesame Parmesan Zucchini

Reviewed: Aug. 5, 2006
OK, I admit to changing the directions,,, I couldn't see how 2 tb of oil would make something thin enough to toss and coat after adding all the other ingredients. So I mixed the oils, brushed the slices and tossed all the other items and sprinkled on top... the zucchini was oily and unpleasant feeling. A little too much cayenne when made this way. Won't try again, I like just plain grilled zucchini w/a little seasoning sprinkled on, no oil and healthier.
