Chicken with Lemon-Caper Sauce

Reviewed: Oct. 24, 2009
Fantastic recipe. I had tried to make similar sauces before and they never turned out quite right, the method is right on with this one which makes is very easy to adjust for personal taste, if you don't like wine, use chicken broth, and you can use the amount of lemon you like. Next time I might add a can of artichoke hearts with the capers.

Roasted Beets with Feta

Reviewed: Aug. 19, 2009
This is just unbelievably good, one of the most beautiful and tasty dishes I have ever had. We make this often. I usually just use onions instead of shallots in the dressing and usually add a little extra cheese.

Very very tasty, also very easy. I added a small box of frozen snow peas and a small can of bamboo shoots and it was fantastic. Served with fried rice also from this site.

Chantal's New York Cheesecake

Reviewed: Jun. 11, 2008
Absolutely fantastic. This is an incredible cheesecake. The first time I made it (my first cheesecake ever) it was just ever so slightly underdone, so the next time I left it in for an extra 5 minutes and it was PERFECT. Can't wait to make it again and again!

Island Shrimp and Rice

Reviewed: May 2, 2008
Very good and very easy to make. I cut down on the nutmeg just a tad and doubled the cayenne (we like it spicy) and it was perfect. Also, my rice had absorbed all of the liquid and had begun to stick after about 15-17 minutes.

Hal's Wine Mustard

Reviewed: Mar. 27, 2008
Really fantastic. I did add 1/4 tsp. of salt and next time I will halve the sugar. We love mustard and I have a feeling I'll be keeping this sauce around.

Crusty French Rolls

Reviewed: Feb. 1, 2008
These are amazing! I've been looking and looking for a good recipe for crusty rolls and this blew the others I've tried out of the water. Very simple, very delicious. Soft and chewy on the inside, nice and crusty on the outside, couldn't be better. I make all of my bread in a food processor, here was my process. Proof the yeast in 1/4 cup of the warm water with the sugar, while it is sitting put the flour and salt in the bowl of the processor with the dough blade. Add 1 cup of cool water while the machine is running, when fully incorporated add the yeast mixture. Let the machine knead it for about a minute, when it is smooth and elastic put it in a large bowl, cover, and let rise for an hour. Punch dough down and continue as the recipe says. This is my standard recipe for dinner rolls from now on.

Kickin' Collard Greens

Reviewed: Jan. 30, 2008
These are excellent. I love collard greens and this recipe is the best I've tried. Same recipe works well for any green, try using turnip greens and adding a chopped turnip or two, yum!

Clone of a Cinnabon

Reviewed: Jan. 22, 2008
Unbelievably good! These are easily the best cinnamon rolls I've ever had. I make them in my food processor, first I proof the yeast in 1/4 cup of the milk with a teaspoon of the sugar. Then I put the flour, salt, and remaining sugar in the work bowl. Start the processor and while running add the melted butter, the eggs, remaining milk, and finally the yeast mixture. Allow the dough to come together and be kneaded by the dough hook until elastic and then I proceed as the directions say. I've made these three times in one week so far. There is PLENTY of icing for my taste, I can't imagine needing to double it!

Honey Wheat Bread I

Reviewed: Jan. 2, 2008
Wow. This is one great bread recipe. I am a beginner at bread making and this was my first try at wheat and it turned out *perfect*. We ate both loaves in less than a day. I will be making this again and again. The only thing I did differently was to increase the yeast to 3 tsp. My food processor started to smoke right at the end of kneading, so I may be trying this one by hand from now on.

Slow Cooker Salisbury Steak

Reviewed: Aug. 30, 2007
Great recipe, just make sure and use low sodium soups or the salt is a bit much. I add sauteed portabella mushrooms toward the end.

Mushy Peas I

Best peas ever. I did not want mine so pureed, so I just used a hand held potato masher to mush them up with the butter, cream, salt, and pepper and they turned out GREAT!!
