Hamburger Buns

These were great for my first time making bread. I halved the recipe and since I don’t really eat white bread I substituted with whole wheat flour (accounting for the fact that it usually requires more liquid.) While they didn’t yield the half amount, they were really yummy and quick and easy to make. I’m fairly new to working with yeast but I do not think they would have turned out well had I never worked with yeast before. The directions do not offer much guidance apart from the bare essentials so I used the techniques from my other yeast recipes and some of the helpful reviews. Nevertheless, it’s a good recipe and I think this will be my “go to” for experimenting with breads.

Sweet Corn Bread

I just had this with some chilli and it was very good. While it was not, dry it was not as moist as a corn bread recipe I've used previously (now lost). That one however was not sweet at all so I have no issues with the small amount of sugar in this one, especially if it's going to be paired with something spicy. The only thing I would do differently is add some creamed corn. If I had read the reviews before I started I might have.

Simple Scones

A great scone recipe! Would have been even more perfect with some clotted cream. What I love about it apart from the taste and texture are the tips that are included in the directions so you don't mess it up. I'm accustomed to making scones but I wanted to try a new recipe (so rubbing in butter wasn't a biggie for me) so I stuck to the the stated ingredients (except the unsalted butter). Now that I know it comes out so great I'll try some variations on it.

Italian Spaghetti Sauce with Meatballs

Croque Madame

This was oh so good! I swear my taste buds were singing the hallelujah chorus. This was so quick and easy to make and very filling. The only thing I did differently was to thinly slice the cheddar cheese since 1) I wasn't keen to have another item - the grater - to clean up. Lol and 2) I saw some persons had issues with getting the shredded cheese to melt properly. It came out perfectly! I feel a little guilty about the cholesterol content of this meal but I'll get over it. Lol

Sausage, Peppers, Onions, and Potato Bake

Oh my word, this was yummy! I'm still licking my lips. I'm trying to incorporate more veg in my meals so I tossed in carrots, chives, parsley and celery for good measure. I also seasoned at each step as opposed to end the end. Will definitely be cooking this again!

Hazel's Meatballs

This was oh soooo yummy! Had to resist nibbling at them while I finished the other parts of the meal. That much ketchup cannot be healthy so I marked it down 1 star. Otherwise it was fab! Variations: I halved the serving size and used regular bread crumbs.The kind of ground beef I get in my country is really lean so I didn't get the problems others had with having to pour off accumulated fat.

Spinach and Black Bean Pasta

I was sceptical but it turned out OK. Had some black beans and broccoli I wanted to use and since I don't eat spinach I would have substituted it with bok choy if I had any. Forewent vegetable for chicken stock and cayenne for chilli pepper.

Curry Pumpkin Soup

This was phenomenal! I just added some cumin. The line 'Cook, stirring, until mixture begins to bubble' initially had me a little puzzled at the stage of the recipe that is occurs. It seems to be in the wrong place but otherwise this was great. Thanks!
