Taco Salad I

This is a good receipe. I liked it so much, that I now make it on a regular basis - but with modifications. I found the Catalina dressing too sweet, so I use Ranch instead. To me, this makes it taste even better. My teenage kids love it and often request it!!

This had a very good taste, but was too thin. I had to add a great deal more of starch then called for in the recipe and cook longer to thicken.

Pecan Pie V

I tried this recipe during this past holiday and everyone loved it!! This was the first time that I made one without using Karo syrup, so I was afraid to try something new, since I was baking for guests. However it was a hit to be repeated!!

Classic Pecan Pie

Mondi's Super Simple Chicken

A definite hit!! I needed to prepare a quick chicken dish and it was definitely that!! Loved the taste and that it was so easy to prepare. I used skinless chicken breasts and eliminated greasing the pan. The butter and fat from the chicken is sufficient to prevent the chicken from sticking. It was still great!!

Spinach Salad with Poppy Seed Dressing

Spinach Cheddar Bake

This is a very good and easy recipe. I used fresh organic spinach and while mixing the ingredients felt that it could use more cheese, crackers and one additional egg than the recipe called for. It was a hit!!

Crab Cakes II

A very good recipe!! Everyone loved them. I was concerned about the cakes falling apart while frying, since I have had that problem in the past. I fried them in my deep frier and they came out perfect. I did end up using more crackers than called for in the recipe, but this is still definitely a keeper!!

Best Ever Jalapeno Poppers

Simply delicious!!! This was my first time making poppers. I usually buy them already prepared. After planting jalapeno this year in my garden, I decided to try making my own poppers. They were absolutely delicious. This is the first recipe that I loved without making any modifications. I did however deep fry them at a lower temperature, to ensure that they did not cook too fast. The peppers we used were so hot, we had to eat them with cooling reinforcements (milk & bread) nearby. All of my family loved them. The batter was the best.

Cabbage Beef Soup

An excellent recipe! Quick, easy and tasty. I use this recipe as a base without much variance. I like to double most ingredients, except for the cumin. I also add either fresh or canned stewed tomatoes. We eat it with corn bread. A definite hit in my house!

Barbie's Tuna Salad

I'm not a big fan of tuna, but loved this tuna salad. I have made it many times, since trying it. Everyone in my family loves it, even my picky 6 year old. I can't give it 5 stars though, simply because I did not have all ingredients on hand. I did not have curry, or dill weed and don't care for pickle relish in my tuna. I found it to be great without the other ingredients and love it on a bed of lettuce.

Simple Ranchy Breaded Fish Fillets

This is one of the best recipe's!! I had a problem though with not having enough of the paste for all of the fish. One thing that helps is to not use really cold fish. If the fish is cold, as you dip the fish in the paste, the paste becomes very thick and lumpy, is hard to spread on the fish and you end up not having enough for all of the fish. I ended up making a second bowl of paste to finish the job. Very tasty!!
