Zucchini Bread II
Used whole wheat flour - usually I adjust the quantity of ww flour when the recipe calls for AP flour. In this case however the zucchini helped keep the ww flour really moist. I added the zucchini without squeezing the juice out. I let the whole dough stand for about 10 minutes so that the ww flour would absorb some of the moisture. Worked pretty well. Was perfectly ready in an hour. Thank You.

Vegetarian Lime Orzo
I did try this recipe basically because I had orzo pasta. I made several modifications with this recipe, it did turn out pretty decent (hence the three stars). To begin with saute orzo with garlic and onions and then add all kinds of vegetables - I added zucchini, carrots, broccoli, cauliflower, and asparagus. Followed the steps after that, however the vegetable broth to pasta ratio is really off. I added another 14 ounce can of vegetable broth the pasta. I added crushed red pepper flakes on the top (extra kick) and extra Parmesan cheese for the kids. Overall a decent recipe.

Chocolate Zucchini Bread I
To begin with the bread turned out to be awesome, super moist and as my daughter put it divine. The only thing i changed (intentionally) was that I reduced the sugar to 1 and half cup. The other change (unintentional - because my six year old was in charge of reading was that ..he skipped the 2 squares unsweetened chocolate part so what happened was I used 3/4 cup semisweet chocolate chips, melted it and used it in the recipe. It was still awesome. I also added some walnuts.
