Cowboy Oatmeal Cookies
As someone who has a horrible baking addition and makes cookies almost every day (my husbands coworker love me) I have to say this is by far my favorite cookie recipe. I just love the butterscotch and oatmeal and they are nice and soft and chewy with a little crisp on the edges. Also as someone who pretty much alters every recipe I encounter, this is the only one I have yet to change in any way.

Mom's Zucchini Bread
This is my second time making this recipe in a week becaus my 11 month old LOVES it! Even my husband, who hates vegetables and all things new, said "it's ok" (his verison of I love it but will never admit that to you), after I force fed it to him! I omit the nuts and double the zucchini and it turns out moist and wonderful! I have a feeling I will be making this every week as long as my son has interest in it! He chose to eat this even when there was brownie on his tray and he doesn't share it with the dogs on the floor.

Baked French Toast
I have made this a few times at Christmas and family get together. I have the recipe memorized and it is a definite hit and really easy and filling. I have learned that Half & Half really isn't necessary and if I don't already have it in the house, and I usually never do, I just go ahead and use milk and it turns out just the same. I also like to use a little nutmeg and allspice in the egg mixture to make it a little less bland. One important tip is to flip the bread over in the egg mixture either a few hours before you plan on cooking it or a few hours after you put it in the fridge, otherwise one side tends to be more soggy then the other.
