Brown Sugar Meatloaf

There was only one problem with this recipe... my husband ate half the loaf in one sitting! :) He said it was "even better than Mom used to make!" I'll be making meatloaf this way from now on. Thanks!

Easy Roasted Red Pepper Hummus

Very yummy, very quick and easy in my food processor! Thanks for a great recipe. It was a hit at my party. It goes great with Wheat Thins and wheat flavored Toasteds crackers. Print extra copies of your recipe, if you're serving this to guests... they will ask for it!

Gingerbread Men

Very yummy cookies! The dough kept sticking to my countertop, so make sure you use plenty of flour. Also, if you roll the dough as thin as 1/8", these taste more like butterscotch graham crackers. They don't need frosting... but they are ADDICTIVE! I used Mini M&Ms for decorating. This is a keeper! THANK YOU!

Sloppy Joes II

Prepared this recipe with the following changes: I used some frozen peppers and onions to save prep time. I also ran out of ketchup, so ended up using 1/2 ketchup and 1/2 barbecue sauce. The combination of the brown sugar, ketchup and peppers is super-yummy... reminds me of a delicious recipe on here that I found for "Brown Sugar Meat Loaf." You must try these sloppy joes... so easy, fast and so yummy! My 2 year old and husband also give this recipe a thumbs-up! Thanks so much!

Easy Quiche

I wanted a portable snack, so I made quiche muffins instead of a big pie. This worked very well as written. I didn't have any baking mix, so I made some, using the recipe for "Biscuit Baking Mix." I changed that recipe to make only one serving, which worked out to be exactly 3/4 cup. Instead of the white flour and shortening, I used whole wheat flour to make these healthier. I used broccoli and turkey ham. I was trying to use up some leftover turkey ham, so I ended up with almost 2 cups of ham. I added 2 eggs and a splash of milk to the bowl. I used a standard muffin tin, and this made exaclty 24 quiche muffins. I only gave this four stars because I'm the only one in my family who liked it... I'm going to have to keep working on the kids, since I was hoping this would be a good snack to take in the car. Maybe I will try different ingredients next time.

Biscuit Baking Mix

I used whole wheat flour and vegetable oil instead of the shortening, as other reviewers suggested. It worked great for my purposes... I was using it in a recipe on here for "Easy Quiche." The recipe called for 3/4 cup baking mix, which I didn't have. When I rescaled the recipe to make one serving, it made exactly 3/4 cup of mix... perfect and a great recipe to have on hand. Thanks for sharing it!

Hamburger Steak with Onions and Gravy

JUST finished eating this, and it was better than expected. I followed the recipe exactly as written, except I didn't have any cooking sherry. I did double the beef broth like others suggested, but other than that I changed nothing. I made the 8 patties as recommended, and my kids (ages 3 and almost 2) each ate a whole one! This is monumental, since I've been having a hard time getting them to eat much of any kind of meat latley. This was so yummy with mashed potatoes, and there was enough gravy left over to put on the potatoes too. Thanks for sharing this awesome recipe! I will make this again and again.

Steak Sauce

We made this when we discovered we had no A1 sauce for our steaks at a family dinner. We made the following substitutions due to lack of ingredients: white vinegar for cider vinegar, 1 packet Taco Bell mild sauce for tobasco. We added a dollop of barbecue sauce to give it some sweetness and smokier flavor. Liquid smoke and/or brown sugar would also probably be a good addition to experiment with. Both husbands liked it, and even most of the kids ate it, although it was a little spicy for them. Now my brother-in-law wants to try using it as a marinade for chicken... it will be yummy for sure! We will keep this recipe around, although we will still probably use A1 for steaks. A good backup! Thanks for sharing the recipe!

Blueberry Dump Cake

Used lemon cake mix, since that was what I had on hand, and saw that another reviewer liked it that way. I also sliced up a cold stick of butter and laid it evenly all over the top of the cake mix on top of the berries with sugar and cinnamon. This cake turned out really really ohhhh so good. I'm not sure I would use the lemon cake mix again. The lemon flavor competes with the blueberries for flavor. They do go well together but we really love the flavor of blueberries, so i will definitely try this again with a milder cake flavor. Wonderful and couldn't be easier! I love that you mix it right in the pan too! Thanks for sharing this recipe!

Cinnamon Honey Butter

The consistency is not like butter, but more like a thick sauce. I followed the recipe exactly, but it really just tasted so strong of honey, I added another stick of butter and another teaspoon of cinnamon. I might end up modifying it even more... we'll see how the family likes it on homemade bread.

Chocolate Chip Banana Muffins

We used peanut butter and chocolate chips. These were easy and fun to make. My kids loved smashing the bananas and helping me to mix them. They will be great for breakfast and bedtime snacks. We ended up with 21 muffins, but could have filled the tins a little higher. A big hit! Thanks!

Curried Cauliflower

Several changes. This was a fantastic base sauce, and so easy! I made the sauce in the pan, can of soup, 1/4 cup milk, 1/2 cup miracle whip light (didn't have mayo), 1 cup water. Then I added about 1/2 head cauliflower, 1 med. sweet potato (diced), 1 cup frozen peas (thawed by rinsing in hot water), 1 red bell pepper. All veggies were RAW when I put them in the sauce. Bring to boil, reduce to simmer and serve when potatoes are done. I did add a sprinkle of salt, black pepper and about 1 Tbsp. sugar while cooking. I also added a fresh jalapeƱo pepper (mild one). My kids actually ate this, which was amazing. Yum! So easy and quick, made from real food... I will be adding this to our rotation. :) thanks!
