Dill Dip III

My mom & I have made this dip for YEARS! It's so yummy & everyone loves it. When asked what I should bring to a gathering, everyone always asks for the veggie tray & dip . mmmmmmm So Good!!! Only difference we have in this recipe is we add a few dashes of worcestershire sauce and 6 or so drops of tabasco sauce.

Hawaiian Chicken II

I wish I could rate this with more than 5 stars! This was AMAZING!!! So tender & juicy & SoOoOo full of flavor! I have a VERY picky 9 year old and he LOVED it! I did change it up just a little. I pre-cooked the chicken on the stove in a little butter, added garlic powder, salt, fresh ground pepper, and a little bit of crushed red pepper. I made the sauce as listed, minus the wine, & added a few dashes of soy sauce and a small can of pineapple tidbits WITH the juice. I put a bit of butter in a glass 9X13 dish & melted it in the oven while I mixed the sauce. (I really think you could skip the extra butter.) Then I put the chicken breast in the dish, poured the sauce on top, tossed it in the oven at 350 for 30 minutes and turned it half way through. I served this with a Lipton chicken & veggie rice and a side of carrots. It was DELICIOUS!!!

Buffalo Style Chicken Pizza

LOVE IT!!! This is soooo yummy! My family & I love hot wings and are always looking for the next best place to get them! & my family is pizza crazy! So this was PERFECT! We don't like blue cheese, so I took other's advice & used ranch...but only enough to cover the ready-made pizza crust. I used Moore's Buffalo Wing Sauce instead of hot sauce...just love the flavor! Hubby said it was the best *&#% pizza he's ever had & that I could make it as often as I want! Thanks for posting this one!

Key West Chicken

One word...YUM!!! We LOVED this recipe! Even my VERY picky 9 year old devoured it. I doubled the sauce, poked holes in the chicken breast with a fork, and marinated it overnight. I used fresh limes and garlic. Boy did my house smell good :) My husband grilled the chicken and it turned out perfect. I plan on making this for my family when we visit them in Florida this year. The only thing I will change is cut back on the soy sauce...it was a bit salty. But WOW!!! This was AWESOME!

Laurie's Shepherd's Pie

This was pretty good. I used instant mashed potatoes, to save time, & really spiced up the meat mixture with Mccormick's Grill Mates Hamburger seasoning & some garlic powder. I also added the day before's left over corn in addition to the cream style can. And finally I topped it all off with shredded Cheddar cheese. This made a lot so I used 2 deep dish pie crusts & prebaked them before adding the ingredients...wrapped the edges of the pie crust with foil to keep them from burning. Hubby loved it. I would have given it 5 stars, but I had to alter it. It's a great starter recipe. Thanks!

Orange Roughy with Citrus Sauce

I give this 4 stars because of the sauce...I will look for a way to thicken it. My husband loved it and so did my picky 11yo. I liked the crispness of the fish but the sauce made it soggy very quickly. This would be a good sauce for any type of fish. Thanks for sharing : )

Pineapple Rice Casserole

This was delicious! I used Jasmine rice instead of instant or regular as some have suggested. The "nutty" taste was the perfect compliment to the other flavors. I used 12 oz of pineapple and used more cheese than called for. I mixed the cheese in with the other ingredients and sprinkled some on top to bake. The next time I make this I will not bake it. The rice is hot enough to melt the cheese and I won't have to heat up the entire kitchen. It could really pass for a dessert too...YUM!

Coconut Tilapia with Apricot Dipping Sauce

This was really good! I didn't have all the ingredients so I subbed a few things...eggs for egg substitute, a Cajun garlic seasoning for the Creole seasoning, and vegetable oil for the canola. I used an assembly line type set up for the 3 different coatings needed. Heated the oil between medium and medium high setting on my stove. Fried each piece until crispy then flipped it over and continued until the fish was flakey. I also didn't use the apricot sauce. Instead I used the pina colada sauce that Red Lobster has made famous. But after tasting the fish by itself, it really didn't need a sauce at all. Very good : )

Simple Creamy Lemon Chicken Sauce

Love this recipe! I'm rating 4 stars because I modify it to our liking. I've used with both chicken and shrimp and my family can't get enough! I used fresh garlic, lemon juice, and basil. I also add a touch of salt, some fresh ground pepper, and minced onions. For the chicken I made a side of rice pilaf and for the shrimp I served it on fettuccine. Next time, however, I will use angel hair pasta because I think the fettuccine was just a bit too thick to pick up the sauce. Oh and with the shrimp I added capers for a bit more zest. I will make this over and over again! Thanks for sharing!

Chocolate Cookie Buttercream Frosting

WoW! This is the best chocolate frosting EVER! I'm only giving it 4 stars because I had to mod it just a little. I made it "as is" the 1st time and it was sooooo incredibly chocolatey it kinda made me cringe, & I'm a chocolate lover! I needed more than what this made so I doubled the recipe but did not add more cocoa or extract. It was almost perfect! I think next time I will try it with 2T of cocoa and add more if needed. Thanks for sharing!

Eh, it was ok. Nothing spectacular. Still tasted like a box cake. I guess with all the add in ingredients, I thought it wouldn't. Oh well...we'll still eat it. Still searching for a GREAT Key Lime Cake :(

Lemony Shrimp over Brown Rice

Eh, it's a good BASE recipe...but really needed sprucing up. I sauteed a white onion in the OO and butter. I also added frozen peas and carrots, a little ginger, salt, pepper, and probably twice as much lemon juice as was called for and used chicken broth instead of white wine. Even after all that, it still is lacking something. But it's still good. Thanks for the idea!

Easy Mexican Casserole

My family wasn't impressed with this. I think the meat needed much more flavor than what the salsa could give it, to start. And I didn't like the way the flavor of the chips changed during baking. The only way I would make this again would be to cook the beef with taco seasoning and making it more of a dip than a casserole by using scoops instead of crumbled chips on the bottom. This would also make leftovers more tasty instead of the, now soggy, chips. Hubby eats mostly anything but only gave this a 3 star. With some tweaking for our personal preference, it has hope.

Pumpkin French Toast Bake

I really wasn't impressed with this recipe. I had a hard time tasting the pumpkin over all the sugar. I won't be making this again. And boy did it stick to the pan! I even sprayed it with Pam before.

Caramel Apple Pork Chops

My family & I didn't care for this. :( That's too bad cuz it sounded sooo yummy! I tripled the sauce & doubled the apples. I also added the pecans on the top. The chops themselves just didn't have any flavor. And I even marinated them overnight in apple juice & soy sauce as suggested by other reviewers. The sauce didn't "carmelize", but it was still good. We loved the apples...just not the chops.

Key Lime Cake I

Disgusting!!! My mom swears this is the recipe she used to make my wedding cake. There's no way!!! Like the other posts have said, it didn't rise at all. I noticed right away the batter would be too thick. I tried adding water, but evidently that didn't make a difference. My cake turned out white. But my mom's cake was green. So I think she's made a mistake. Boy, I hope I find the real recipe. It was DELICIOUS!!! If I find it, I'll post it. But don't waste your time on this one...YUCK!!!
