Zucchini Pasta II

I made this last night for dinner and it was delicious! I did change it slightly: I added sliced fresh mushrooms and fresh diced red peppers instead of the jarred roasted peppers with the onion and garlic and added more cream cheese and broth to make more sauce. I used tri color rotini (that was what I had in the pantry) and used dried basil. I also added diced, grilled chicken when I added the cream cheese. My husband and 3 year old son both scarfed it down. I will definitely be making this again with all the zucchini I have from the garden!

Batman's Best Caesar Dressing

I really liked this dressing. Especially because it was so easy to make. I had anchovy fillets left over from another recipe so I used them instead of the anchovy paste. Other than that, I followed the recipe pretty closely.It was very creamy and exactly how I love caesar dressing (I love anchovies!) I did make only a half sized recipe and used about 1/4 cup less olive oil. I actually think I would use a ittle less oil next time. Maybe add a little more sour cream instead (?) You could really taste the olive oil. But maybe if it sits for a day the flavors will meld a little more. I will definitely be making this one again since I usually have all the neccessary ingredients around the house. Try this one!! You won't be sorry!

Cha Cha's White Chicken Chili

This recipe was just OK in my opinion. I didn't think it was too spicy, but I followed others advice and only used 1/2 can of jalapenos, but extra cayenne. I have had other white chicken chili that is much better, Probably won't be making again.

Easy BBQ Flank Steak with Chipotle Mayo

This was excellent!! I didn't have any honey so I used about 1/4 cup of brown sugar and I marinated the steak for 36 hours. The dipping sauce was very good and so easy. I will definitely be using this recipe again!

Chuck's Favorite Mac and Cheese

This was the first time I made mac and cheese from scratch and it was a huge disappointment. The texture was gross and it was greasy with all the breadcrumbs on top. I will not be making this again.

Summer Style Chicken

This was a very good dish, but I did a few things differently. I only had yellow squash in my garden so I didn't use zucchini. I also used fresh tomatoes -sliced, and fresh basil from the garden. I added a handful of diced onion, garlic powder, and seasoning salt. I had left over marinated grilled chicken so I diced that, and added it to the veggies for the last 25 minutes. I topped it all with colby jack cheese for the last 10 minutes. It was surprisingly flavorful and easy to make. I served it with rice pilaf and fresh green beans again from my garden.

Coconut Tilapia with Apricot Dipping Sauce

I made this last night for dinner and it was very good. I did bake it in the oven as others had suggested, since I don't usually fry food. The dipping sauce was different and went with the fish well. It was a simple and quick recipe to prepare and the ingredients are things I usually have around so I know I will be making it again.

Chicken and Peppers with Balsamic Vinegar

This recipe was just not that great. It was pretty easy but didn't really WOW me. The balsamic reduction was not very flavorful and the dish definitely didn;t look very pretty. I will not be making this again.

Southwest Skillet

I made this for my husband's dinner last night and his friends ended up over for dinner also. They all LOVED it. It was very easy to make and the recipe makes a lot. I did change a few things-sorry. I added more chili powder, cayenne pepper, a can of corn, and topped it with Fritos chili cheese flavored corn chips and sour cream. I will definitely be making this again since it was easy and the ingredients were inexpensive.

Open-Faced Broiled Roast Beef Sandwich

These were delicious and easy. I was surprised how good they were since it took such little time to prepare. I made an au jus for dipping but we didn't need it, it actually took away from the goodness of the sandwich. Will definitely be making again. And I did make this exactly as the recipe was written.

Chesapeake Bay Pasta Chicken and Shrimp

This was pretty good, and very easy. I added fresh broccoli to the pasta while cooking, and used half and half but other than that, I made it just as written. I think heavy cream would have been better, but I try to cut calories and fat wherever I can. I will definitely make this again and may even try with just chicken and different vegetables.

Mimi's Slumgullion

This turned out to be very good!! I was a little skeptical at first but was pleasantly surprised. I did change a few things...I used one red and one green pepper. I also sliced the potatoes and used red so I didn't peel. I also used 2 bratwurst and 4 hot links that were left over in the fridge. I will definitely make this again!

Warm Heart Stew

I thought this stew was very good. I did add extra chicken broth and used only kidney and pinto beans. I cooked it the night before on low for 7 hours then reheated it for dinner the next night. I think next time I will use spicier bratwurst or chicken sausage for a little more flavor, but I will make this again.

Hearty Italian Sandwiches

I made this for my husband last week and he loved it. I thought it looked a little greasy but he said it was delicious. I topped it with Provolone cheese and served it on toasted wheat rolls. I will definitely make these again.

Gary's Stuffed Mushrooms

I thought these mushrooms were very boring. They tasted just like stuffing plopped on top of a mushroom. I have made other recipes for stuffed mushrooms that have much more flavor and will not make these again.

Shrimp Scampi Cheesecake Appetizer

I made this to bring to a New Year's party and they were a huge hit!! I did make a few changes, though. I used regular Gouda, not smoked and sprinkled a little cayenne pepper over top before baking. I used the mini fillo dough cups from the freezer section of the grocery store and they were perfect! I know I will be making these again!

Mom's Beef and Beer

I made this yesterday for dinner and really enjoyed it. I did do some changes. I added extra garlic, more beer, less onions and extra salt and pepper. I made it in the morning and just warmed it up, served over mashed Yukon Gold potatoes with a big slab of French Bread. Delicious!!

The Ultimate Chili

This is the greatest chili recipe!! It is a little different than my traditional recipe and it has almost a sweet taste. I do add twice the meat and use black beans, kidney beans, and pinto beans. All the different beans make it interesting. I also add some cayenne pepper since we like things HOT! This chili freezes well, we had some this weekend after going to the pumpkin patch along with the Homesteader Cornbread from this site. Even the kids liked it!

Black Pepper Beef and Cabbage Stir Fry

I wasn't sure how well we would like this recipe just as it was, but it turned out very good. I did add some hot chile oil and added an orange bell pepper with the red. I made double the sauce since we lke stir fry saucy. I will definitely make this again and may add broccoli nex time!

Oven Brown Rice

This is a very good recipe. My husband and I are trying to eat less white rice and this recipe offers a great substitution. I did add mushrooms and used only beef broth since I was serving it with beef kabobs, and it came out great! Will definitely be making this again.
