Brunch Potato Casserole

Fabulous recipe! I make it twice a month for our sunday brunch at church. I vary it each time: using ham, sausage, or bacon. I also use sharp, medium, or mild cheddar. And it makes it easier to use frozen hashbrowns (shredded or o brien) or even tater tots! It can be prepared the night before, and popped in the oven in the morning. It is always completely gone.

Not the kind of sugar cookie I was thinking. It did not hold shape very well. I'll stick with regular sugar cookie recipe from this site.

Gluten-Free Yellow Cake

I made this twice so far. The first time I used regular rice flour that I buy from an organic store. It turned out well...but you could tell it was "gluten-free". The second time, I used a rice flour I bought from an asian market...it's made in Thailand, and it is ground superfine (it was rice flour, not to be confused with sweet rice flour). It worked much better, and it tasted like the real deal. This is an excellent recipe, as long as you use superfine rice flour. (I've started using the superfine rice flour for all baked goods, and it makes a HUGE difference.)------------------------------------------------------------ Also, try adjusting the flours to 1 3/4 cup Thai rice flour and 1/2 tapioca flour. I just did a side by side comparison of this (chocolate cake version) and a boxed Pillsbury chocolate cake. The texture of the gf cake is pretty good (no longer the chewy texture of the original recipe.)

Sugar Cookie Icing

Easy Decadent Truffles

This was super easy and super yummy. I took others' advice and used 2c sugar and 2c chocolate chips. It was still very sweet...need milk or coffee for each truffle...just the way I like it.

Egg and Hash Brown Pie

This was great! I made it for a church brunch. I used sweet mayan onions for the recipe and used green onions to sprinkle on top for color. I added more eggs and cheese. I also substituted sausage for the bacon. I incorporated another recipe and added garlic salt, mustard powder and, I know it sounds gross, but worcestershire sauce. I had my friends rate it, and it got 5 stars.

Cheese Blintzes

Easy to make. My 3yr old daughter and 1 yr old son love them and ask for them every day. I use kids bread (extra iron and fiber) and fat free cream cheese.

The Best Rolled Sugar Cookies

I noticed the recipe was for 5 dozen cookies. Since I was making them as party favors, I scaled it down to make 15 cookies (1/4 recipe). I think that was the mistake. I'll have to try it again without changing anything. Also, the few that I made on a regular cookie sheet turned out better than the ones on the Airbake sheet.

Sugar Cookies with Buttercream Frosting

I've tried other sugar cookie recipes from this site, and this one is the best (although I use only the recipe for the cookie since I have a favorite icing recipe.) I've made these for Thank You luncheons, my daughter's birthday party (all the kids decorate their own cookies), and baby showers. Easy to roll out, and cutouts come out clean. Thanks for sharing!
