Quick Fruitcake

My mom asked that I bake her a fruitcake for Christmas without nuts since she is allergic. I added a cup of whole candied cherries in place of the nuts and it turned out GREAT! This has to be the easiest fruitcake recipe on the planet and it tastes terrific, too. My mom is 85 and is a wonderful cook, so I was so happy that she asked to take the whole cake home with her! Highly recommend this one!!

Cooking Light magazine's Chicken Parmesan

An alltime family favorite for everyone in my family - all ages. So simple to prepare! I like to use prepared spaghetti sauce (we like "Sockorooni" sauce by Paul Newman). You can have it ready in minutes, add a salad and some crusty bread to dip in olive oil and you have a feast! I do make a slight change, I brown the chicken in olive oil instead of butter. Enjoy!

Joy's Prizewinning Trifle

Made this for big family Easter dinner and it was a HUGE hit! My mom. who is a great cook, said it was the best thing she had ever put in her mouth! I left out bananas, used the cheesecake flavored instant pudding per another reviewer, cut the angel food cake into large cubes, and added milk so the pudding would not be so stiff. Please note, this is such a simple recipe that you can not mess it up! If you want more fruit or any other ingredient, just add/increase to your personal taste. INCREDIBLE! Thanks, Joy!

Beth's Spicy Oatmeal Raisin Cookies

Beth, my favorite cookie recipe used to be your Snickerdoodles, but these are just superb! I have made them 3 times this month with a few small additions - walnuts and chocolate/white chocolate chips and a little more cinnamon. Keep up the great work in your cookie kitchen!

Blue Cheese Pear Salad

Wonderful choice of combinations that make this fruit salad a very special treat! I didn't have all of the items (ie, raspberries), but it was enjoyed by one and all. Thanks for the recipe!

Goat Cheese and Arugula over Penne

The best salad I have ever had! Argula was hard to find, but well worth the search for this dish. The flavors are superb together. I wouldn't make any substitions unless you cannot find fresh cherry or grape tomatoes. Firm plum tomatoes work well in that case. A big thanks to Christine L for this recipe. I am been serving it at least once a week since I found it! Family loves it, too!

Baked Slow Cooker Chicken

This was probably the best chicken I have ever cooked! Every member of the family was a member of the "clean plate" club. I seasoned with garlic salt, paprika & rosemary (inside & out) & used lots of seasoning. It definitely will be cooked again & again for its taste and simplicity.

Kielbasa and Bow Ties

I have cooked this twice now. I liked it a lot, but my family says it is too tomatoey. Perhaps the tomato taste overpowers the kielbasa.

American Shepherd's Pie

I have been looking for some time for an good and easy Shepherd's Pie recipe and this one fits the bill. The thyme was a bit much for my family so I added a little Italian Seasoning the second time I cooked it. Used Colby Jack cheese as well and it is terrific! The frozen mashed potatoes out today taste as good as the real thing so, all in all, this is one terrific & easy recipe! Thanks, Lisa!

Pork Chop Pileups

Great dish. I cooked loin chops separately as I didn't want them to be too dry. I was in a hurry & cooked it in the microwave for 30 minutes in a 2 qt round cassrole. Worked like a charm. Super leftovers, too! I will cook this one again soon as a side dish.
