Banana Oat Muffins

Reviewed: Mar. 15, 2013
I could taste the baking powder in the final product, which I didn't like. I also would have liked a tad bit more sugar. I may frost what's left just to perk it up a bit.

Best Ever Chocolate-Free Blondies

Reviewed: Jan. 30, 2013
Wow! I really liked this recipe. Of course I didn't follow the directions exactly, so let me tell you what I did. I changed the servings to 8 (so I wouldn't have to divide eggs.) I used dark brown sugar. I left out the cinnamon. I also left out the nuts and decreased the peanut butter chips by a lot. (I didn't measure.) Then I divided the batter into thirds (roughly) and cooked 1/3 of the batter in the microwave for 1 minutes and 10 seconds. It was SOOO good. Also, I tried 1/3 without peanut butter chips, and I liked it that way, too. Finally, I tried some without peanut butter chips and with marshmallow creme spread on top. That was also good. So...have fun and enjoy.

Peanut Butter and Oat Brownies

Reviewed: Jan. 6, 2013
I like the flavor of this recipe, but I definitely think the recipe needs leavening other than the eggs. Were I to make it again, I would add perhaps 3/4 tsp baking soda and 1/4 tsp baking powder. Without the leavening, the baking time definitely needs to be increased. At twenty minutes with no leavening, this was nowhere near set enough to take out of the oven. I also would decrease the sugars to 1/2 cup each, as I prefer cookies that aren't so sweet.

Fluffy French Toast

Reviewed: Nov. 6, 2012
This was a very blasé recipe. It doesn't have anything that makes it stand out. It tasted okay, but had no special "oomph" to it. The flour gave it, perhaps, a bit more of a crust.

Fluffy Pancakes

Reviewed: Oct. 21, 2012
This is my absolute favorite pancake recipe. I love how the pancake holds the syrup in so that each bite has a perfect infusion of flavor. I also love that the butter is in the batter. It is the perfect, tender, and delicious combination.

Microwave Mississippi Mud Cake I

Reviewed: Sep. 22, 2012
Wow! I've been experimenting with microwave cake recipes for a while now, and this one is by far the best I've tried. I did add some baking powder, so I can't say how the "original" recipe is, but with about 1/2 tsp baking powder, it was amazing. I've also made it with peppermint extract, which I loved. I don't like things too sweet, so I cut the sugar to half and didn't frost it. It was perfect for me. Also, quartering this recipe works really well. Update: My favorite version of this cake is more "brownie-style" - which means I cut the eggs in half (but still throw in a pinch of baking powder.) I also love this cake as a peanut butter brownie/cake. Substitute half the butter for peanut butter. (I don't add extra flour to make up for the cocoa and it hasn't been a problem.)

Portuguese Fried Bread

Reviewed: Aug. 19, 2012
These are good and very easy to make, but are truly nothing more than fried dough. I'm unlikely to make them again. I do recommend you pat them pretty flat before frying. They puff a lot.

Aunt Anne's Coffee Cake

Reviewed: Jun. 28, 2012
Wow! Yum! I followed the directions pretty closely and my cake turned out to be perfectly delicious! I used a 10" round and it was the perfect size for me. I will say I was surprised at how much volume the cake had. It really does poof up. I did put some streusel in the middle as well. Also, after some mental debate, I put the top layer of streusel on the cake BEFORE putting it in the oven and it was perfect. My coworkers kept commenting that the cake had the perfect combination of crunchiness from the top layer, balanced with the delectable-ness of the rest of the cake. I really recommend trying the cake recipe as it is written before making too many changes. It was super yummy.

Easy Microwave Chocolate Cake

Reviewed: Jun. 28, 2012
I like this cake. It turns out well and is easily adaptable. I like it as a peanut butter cake, especially. I just exchange 2/3 of the butter for peanut butter. If I want to leave out the cocoa, I replace it with flour. This recipe works well for me.

Naan

Reviewed: Jun. 20, 2012
This did not work well for me at all. The finished product wasn't naan. The flavor and texture were both slightly wrong for it to be naan. It was a very humid day, though, so I will chalk it up to that. I will try one more time when it isn't so humid.

Hillbilly Pie

Reviewed: Jun. 18, 2012
I like this pie, but do think it is too sweet. I've tinkered with adding less sugar and adding a little flour to help thicken it. I've also tried simply adding less sugar. Neither of those worked perfectly. I might try tinkering a little more, because I really do like it. I just wish it wasn't quite so sweet.///Update: on a side note, I had real pecan pie this summer (I live overseas), and this is not even a close substitute. I still like this pie, but can't compare it to pecan.

One Bowl Chocolate Cake III

Reviewed: Jun. 7, 2012
I made cupcakes and this recipe is TOO moist. The cupcakes really tasted underbaked, and I made a point to overbake them. Maybe as a cake it works better.

Chocolate Ganache

Reviewed: Jun. 7, 2012
The flavor was fine, but the consistency was too thin for me. I am willing to concede, however, that I used a brand of chocolate chips that is also not my favorite...it is the only kind I can get where I live.

Best Chocolate Chip Cookies

Reviewed: May 26, 2012
I agree with the people who don't see what the hype is. These were too cake-like for me and I only put in 2 1/4 cups of flour. That was still too much in my opinion. I also felt they didn't have much flavor other than a ton of chocolate. I do like them better baked for a shorter time than a longer time. Everyone's oven is different, though. For me, twelve minutes was about right.

Nutty Brownies

Reviewed: May 8, 2012
I love these. They are super easy and taste good, too. I half the recipe, cook them on a desert plate for 2.5 minutes, and have just enough brownies for two. I love not having leftovers around to tempt me.

Best Buttercream Frosting

Reviewed: Mar. 16, 2012
I've made this frosting several times now. When I take the time to beat the sugar and butter together until the sugar is dissolved, it is delicious. It takes a solid six minutes, or longer, though. I've also substituted half the butter for peanut butter and that has worked well for a peanut butter frosting.

Peanut Butter Cupcakes

Reviewed: Feb. 1, 2012
These taste really good, but I also came out with very flat cupcakes, so that was disappointing. I also had a hard time getting them to cook all the way through. They were either raw or slightly burned, even with the temperature turned down.

Cinnamon Syrup

Reviewed: Dec. 16, 2011
Went well with pumpkin pancakes. I only used 1 tablespoon of flour and the consistency of the syrup was perfect for my tastes. Note: I have also tried 1/2 tablespoon of flour, but that wasn't quite enough.

Pumpkin Pancakes

Reviewed: Dec. 16, 2011
Too dense for me, and I could taste the vinegar. For that matter, I could SMELL the vinegar with each bite, which was a bit of a turn off. I also think it needs more spices. Finally, the recipe made more than I was expecting, which means I have a ton left over for freezing.
