Chef John's Buttermilk Biscuits

These were too crunchy for me. If I were to ever make them again - which is unlikely - I would roll them thicker, bake them at a lower temperature, and lessen the bake time.

Chocolate Cupcakes

I wanted a recipe for chocolate cupcakes to replace the one I had been using. I love the texture of the cupcakes with this recipe, but the flavor was a little too blasé for me. However, it is so much better than the other, that I will use it until I find one I like better.

Basic Biscuits

This makes a great flaky biscuit, but doesn't have a whole lot of flavor. I think I would recommend more salt. I would also recommend turning the heat down a smidgeon so that you can role the biscuits a little thicker. Finally, there is an after tastes of baking powder that I would have preferred not to taste.

Chocolate Crinkles II

These looked nice, but the flavor was bland and the texture was really odd. I hoped for a texture like a brownie, but got something so airy that it floated in the glass of milk - even after several minutes. I also thought rolling them was very sticky work - more sticky than I remember this type of cookie being. Finally, they didn't flatten during baking. I had to flatten them with the bottom of a glass before baking. I also found that baking them eight minutes was still a little too long. Ten minutes was definitely too long in my oven.

Oatmeal and Everything Bars

I liked these, but my coworkers LOVED them. I also found that doubling the oatmeal mixture worked much better for me. I live overseas, so I have to make my own caramel as wrapped caramel squares aren't available here. That makes this recipe more effort than I usually want to expend, but as my coworkers love to request this recipe, I make it every couple of months. I've tried making it with less butter in the crust, but then I get a weird, gritty texture. I haven't found a butter ratio that I'm really thrilled with.

Double Chocolate Brownies from Egg Farmers of Ontario

I tried this recipe because it has oil instead of butter. It was too cakey for me. I personally recommend using just one egg. Also, without the chocolate chips, it is pretty blasé. (I made one batch. Half of it had chips and half didn't.) In a pinch - meaning if I don't have butter - I might try it again.

Strawberry Cake from Scratch

This tasted better than I thought it would when I mixed it and put it into the oven, but it still wasn't anything to get excited about. First, the color was an awful pinkish gray. I really wished I had some food coloring to make it a little more pink or red. After it was baked, I found the strawberry flavor to be so subtle that it was almost not there. I also wished I had used a little more leavening in order to get more rise. The only thing that I like about this instead of simply making a boxed mix was that it has a lot less artificial flavorings and preservatives.

Butter Pecan Bars

Since I found this recipe two weeks ago, I've made it four times. I really love it. I like it as is and I like it with coconut. I have found that I need to bake it significantly longer than the recipe says, but that isn't enough to make me give it fewer stars. Here are my personal preferences: use chopped pecans, use 1 1/4 cup dark brown sugar and no white sugar, use 1 cup coconut, throw in a pinch of baking soda (about 1/4 tsp.). That combination works for me!

Grandmother's Buttermilk Cornbread

As written, I give this four stars because I think it is too sweet. I reduced the sugar to 1/2 cup and still found it way to sweet. However, I thought the texture was excellent and the flavor really nice. I will make it again, reducing the sugar to 1/4 cup.

Easy Baked Pumpkin Pudding

This tasted all right, but I am unlikely to make it again. I definitely think the cinnamon should be mixed into the pumpkin batter rather than sprinkled on top. I can also vouch that you need the entire two tablespoons. I personally think it could have used an extra egg and a larger pinch of baking soda - maybe one teaspoon instead of the one half I used.
