Broccoli Delight Salad

I use this salad recipe all the time. It is so easy and user friendly. I use dark raisins, dried cranberries or dried cherries, whatever I have on hand as well as cauliflower too. It is the dressing that adds the flavor. I also change the vinegar once in awhile. This time I used red wine vinegar. It is so easy to make and take places. We never tire of it.

Nonie's Best BBQ

Very good flavor. Reminds me of my mother's recipe. I like the tang. I think the next time I will add green peppers for extra veggies. I didn't cook the sauce in a separate pan. After the meat browned, I drained it and then added the sauce to the meat mixture and let it simmer for 15 minutes or so. Saves a pan.

Green Beans with Smokey Bacon Vinaigrette

I just wasn't that impressed with this dish. I love the combination of ingredients and followed the recipe exactly but something was missing for me, not enough flavor. Sorry. I drained off the bacon grease, was I supposed to do that? Maybe that is why it just lacked flavor for me. I will try this again as I have had all of these ingredients in the past but for some reason this just wasn't flavorful enough for me.

Coffee Liqueur Brownies

My brownies were excellent. I had 3 egg whites which I used and an extra tablespoon of coffee liquer. The brownies were moist in the middle and a little crusty on the outside. I baked them for the minimum amount of time. Loved them. I melted the butter and ch. chips in the microwave in the 8x8 pan and added the rest of the ingredients. This worked out just fine. I had no problem removing them from the pan either. I served this with vanilla ice cream and fudge topping.

Jamaica Cake

Very good cake but I'm not a big lover of banana in cakes but tried it anway. A little too sweet for my taste. Wish more of the pineapple flavor would come through. Don't know if I would make it again. My husband seems to like it. It kind of reminds me of a coffeecake recipe from years ago.

Rich and Creamy Beef Stroganoff

Followed this recipe exactly and thoroughly loved it. I thought maybe 2 t. of pepper flakes would be too much but my husband said it was fine. The only thing negative I could say would be I don't know how this would feed 8. Seems to me probably four people but I guess that would depend on the serving size. I would definitely make this again.

Peanut Butter Cookies IX

I had no problem with these cookies holding together and maybe it is because I used egg whites only and used maybe a total of three egg whites and added 1/4 cup more of flour. They baked for about 10 min. I didn't think they were too sweet and I'm not a big sweet eater. I would make them again and by the way, I used regular oatmeal and quick cooking oatmeal and they taste just fine. I did not grind down the oatmeal to make it finer. If I make these again and use whole eggs maybe I would use two large eggs and then again, maybe not. They were very good.

Honey-Lime Enchiladas

Very, very rich. I liked the unique flavor of this dish, not the typical enchilada, but after eating two, I concluded it was very rich, could barely get the last bite down. I doubled the marinade as suggested but only marinated about 45 mins. I could have used a little deeper dish as there was quite a lot of sauce to pour over the enchiladas. Maybe the next time I would throw some black olives in with the chicken and cilantro but all in all, a very tasty rich dish. I would make it again. FYI - the recipe calls for Monterey Jack but mentions cheddar in the instructions. I used both. I also used the half and half and the sauce thickened quite well.

Cinnamon Cherry Cheesecake Squares

I'm totally confused by the "24" crushed graham crackers. Too vague. I have made this recipe several times and had to tweek the crust. 24 gr. crackers is a lot of cracker crumbs, but 1/2 cup melted butter is a lot too. So could someone please figure this out? Love the recipe. I get many compliments. I guess I'll look up another cheesecake recipe to see if I can figure this one out.

Blueberry Pound Cake

Very sweet. Don't know if I would add that much sugar to the pan. I did eat it when it was warm. Very pretty cake, maybe could add a few more blueberries than the 2 cups. I would make this again. I baked this for 75 mins. and it was completely done. Maybe it could use a little citrus flavor, like lemon zest.

Tossed Romaine and Orange Salad

Light, refreshing, not a heavy dressing. Doesn't stick to the lettuce but that's ok. I think it's perfect with a heavy meal because of the lightness. We had beef stew and I served this and thought it balanced nicely with the stew. I also did not think it was too tart. I guess if one wanted to thicken it up a bit, that would help it cling better but I really don't think I would. Salad needs to be eaten soon after the dressing is poured over the salad and toss quickly and serve.

Fruit 'n' Nut Turnovers

FYI -I used puff pastry sheets which made it simpler. I would like to try the entire recipe the next time. I wasn't crazy about the filling. I think I need to cook the apricots longer and it definitely seemed too sweet to me. I will be making it again and hopefully the second time around I can get the filling to have a little more citrus action going on as I do feel it was too sweet.

Caramel Flan

First of all, I threw out the first batch of sugar as I stirred it. Secondly, according to the description, serve warm, I flipped it out of the dish before it had completely cooled and it fell apart. I guess that was my fault. I should have chilled it overnight so where does the "serve warm" come in. I used 1 cup of sugar as someone suggested. I might go back to the 3/4 cup if I make it again. I thought it tasted pretty good. My sugar got to the amber colored stage, maybe a little bitter, but since it was so sweet, I guess it was ok that way. I will try it again but will chill it the next time. My husand said on a scale of 1-10, he'd give it a five. I would try it again but would be more careful.

Thai Peanut Noodle Stir-Fry

I thought the flavor was delicious. I did add more rice vinegar, per suggestions, to cut the sweetness and a little fresh lime juice. I guess I would cut back on the sweetness the next time but overall, I think it was superb.

MMMMM... Brownies

Nice and moist, chewy, chocolately, turned out quite good, very easy recipe, simple and uncomplicated. I had no problems. I baked it for 25 mins. which seemed like enough time.

This set up nicely but didn't have a lot of flavor though I used orange. My two grandchildren didn't seem terribly interested in it. I will try it one more time with red jello and see how they do with it.

Oven Brown Rice

Well the flavor was definitely there but way too salty for my taste. Will try this again but with the powder not the all the salt. It did take another 45 minutes at 375 for me to finish this off. Why can't it be cooked in the microwave? I think I will try that the next time.
