Chef John's Coq Au Vin

This is a lot of preparation but if planned ahead, it goes smoothly. I liked it very much. I really am a white meat lover but I decided to go with the thighs as suggested and it was very good. I especially loved the sauce on mashed potatoes so that was my favorite part. My husband didn't say he liked or disliked it but (and I hate to admit this), he pulled out the ketchup. Why would he do this? He loves chicken thighs. Maybe my problem with him is he gets too many good meals. Don't know if I'll make this again if he is going to use ketchup.

Tennessee Meatloaf

I have tried many different meatloaf recipes and have kept only a couple but this one is a keeper. I had all the ingredients on hand so I had to try this. Very good, very flavorful and made quite a bit. I did shape it into a loaf on a cookie sheet and baked it which cut down the roasting time. It makes great sandwiches too. I usually don't care for oatmeal in my meatloaf but didn't notice it in this recipe. Very good. Thanks for an excellent recipe.

Ranch Dressing II

I was very short on Ranch dressing for my Buffalo wings so I whipped this up in no time. My guests raved about it and so did my husband. He wants me to throw the bottled dressing out and use this one from now on. I followed the recipe exactly as I had all the ingredients. I was amazed at the flavor with just a few ingredients. I am going to try the buttermilk the next time to thin it down but loved how thick it was and creamy. I will be making this again.

Oatmeal Craisin Cookies

Excellent cookie recipe. My husband has no will power when it comes to these cookies. I had no trouble with any of the ingredients. I used unsalted butter and added a little more salt to compensate. I will be making these again and again.

Bake Sale Lemon Bars

After reading the comments, I hesitated to follow the recipe exactly so I added a 1/2 c lemon juice and zested a lemon, baked it in a 13x9 glass pan at 350. I added a little more flour. I felt the filling was plenty with 3 eggs. Just tart enough without being too sweet. I would make them again. I don't like altering recipes but in this case, I thought I had better try lowering the temp and adding more lemon juice. They turned out great.

Pea Salad II

I thought this was very good. I should have made more as I really didn't think about the quantity. I felt the dressing was very flavorful, maybe I could have made a little more but overall, I thought everything was very good.

Uber-Braten Kielbasa and Sauerkraut Casserole

I felt this was rather bland and dry. If I make it again, I will add more cheese sauce, kraut and kielbasa, maybe even use sharp cheddar. I was rather disappointed as I love all the ingredients. I had hoped it would have more flavor. Sorry, just didn't do anything for me.

Sweet Blackberry and Brandy Sauce

Wonderful. I used two bags of frozen berries. Served it over Scandinavian almond cake to my elderly uncles and they loved it. I also added more brandy and strained it. I used the pulp over ice cream for me. Will be making this again.

Little Ann's Peach and Blueberry Pie

I made this today and it turned out pretty good. I would watch the amount of sugar you use if the fruit is fairly sweet. I only used a 1/2 cup of sugar and doubled the tapioca. The peaches were pretty juicy and using fresh blueberries too. I was happy with the way it turned out. I would make it again.

Roasted Broccoli

My broccoli was way too salty and too spicy for me. I even had 4 cups broccoli. I don't think I will be making this again. Just didn't care for the combination of everything. Sorry.

Chef John's Mushroom Gravy

This recipe is great. I served it with Chef John's Classic meatloaf and it is a really good gravy recipe considering there isn't any meat drippings. I will be making this again. Thank you Chef John. FYI - I used unsalted butter and low sodium beef broth and it wasn't too salty. I did not use the beef stock but either would work.

Classic Meatloaf

I would have to agree with everyone that the cooking time is way off for a meatloaf that is 4x6. Maybe if it was flattened out more, it would only take 30 to 35 mins. to cook. At any rate, I thought it was very good. I liked it. I put in too much Italian seasoning by mistake but it still turned out fine. I wasn't sure if the bread crumbs were fresh or dry but I used dry and it was moist enough. I also used the mushroom gravy recipe Chef John posted and it was excellent. I have leftovers which we will enjoy in a sandwich. Glad this was successful.

Tasty Tuna Burgers

I bought a 6 oz. packet of tuna which was perfect. I added all the ingredients as stated. I chilled them for 30 mins. before frying them. I used a nonstick pan sprayed with Pam. They turned out perfect. They held together beautifully. I had no problem with them at all. I think they are even better served without a hamburger bun, on a plate with tomatoes and lettuce and maybe some coleslaw. I will be making them again. Try the packets of tuna fish. I think there is less moisture in those than the canned and it is a little more than 6 ozs. My husband doesn't like tuna fish but he tried this and gave it a thumbs up. "Very good".

Lisa's Jerk Chicken

Oh my, what can I say? This was superb, fantastic. The flavor was wonderful. The next time I make this I will double the chicken. My husband and I cleaned our plates of one whole chicken. The aroma when it was cooking on the charcoal grill brought back wonderful memories of Jamaica. FYI I couldn't find the Scotch bonnet peppers so substituted Serrano peppers and they worked just fine. I wore gloves and a mask when I was cleaning them as I did remove all the seeds and it was plenty hot for me. I hope to find the bonnet peppers the next time I make this. I also marinated mine for three days.

Red, White and Black Bean Salad

I made this 24 hrs ago. The dressing is very light and the flavor blends well with the vegetables. I just didn't think it had enough flavor because it is very mild. I don't know if I will make this again as I think it definitely needed another flavor and I am not sure what yet. I had plenty of dressing, actually just right. If you are looking for something with more spice, this isn't the recipe for you, but if you like a very mild subtle flavor, this is it.

Best Cheesy Broccoli Soup

I thought this was very good. I substituted chicken broth for the bouillon as I did not have the cubes and I prefer chicken broth and added water too. I pureed it a little bit as I like it a little smoother and thicker. Basically, all the components were there and it turned out great. Loved the idea of the carrots and potatoes. It just adds that much depth to the flavor and consistency. I will be making it again.

Michele's Ground Beef Casserole

I was disappointed that the rolls didn't cook all the way through and I waited to put the cheese on the top. They were light brown, I added the cheese. When it melted, I served the casserole and the underside of the rolls were gooey. Kind of reminded me of Shepherd's pie, without the mashed potatoes. ADDENDUM: I have decided this is much better the second and third day. Flavors were married beautifully. I was still disappointed the crescent rolls didn't bake up better. I do think biscuits would be great on top but make sure they are cooked all the way through.
