Cooky Cookies

I never have corn flakes so I just use 1-1/2 c. each of the oatmeal and coconut. I also add 1-1/2 c. chocolate chips and 1 c. of coarsely chopped pecans. This would also be good with white chocolate chips, dried cherries, and macadamias (might use half almond/half vanilla).

Cuban Ropa Vieja

This was good and quick to get started. I did add more garlic and a little chipotle chili and I deglazed the pan with the broth and mixed all the ingredients in the pan before adding to the crockpot.

Spring Biscotti

Easy and tasty. Good for bake sales. I have made it with cherries and pistachios and also with macadamias and dried cranberries (I used almond extract instead of vanilla and omitted the orange zest). Both are easily dressed up with drizzled chocolate or just plain.

Butter Lamb Gravy

Out of garam masala--made my own from "Easy Garam Masala" on this site. This is easy and relatively quick. I was worried about the honey but it added just the right amount of "sweet" the lamb needed.

Chicken, Spinach, and Potato Soup

I thought this was quite bland. I added a tsp of curry powder which helped and then followed another reviewer's suggestion to thicken it up with a touch of the immersion blender. We'll eat it but I won't make it again without a lot of upgrades.

Bigos (Hunter's Stew)

I added extra beef broth and caraway seeds and just simmered it stovetop for an hour; let it sit for a couple of hours to cool off and then re-heated it. Very tasty and every one liked it--pretty easy.

Heavenly Lamb Shanks

I really like this recipe and have made it several times. I use the leftover juices as soup base for lamb stew (strain, degrease, and freeze) My only problem is consistently finding lamb shanks in my area. I buy a whole lamb every year and it only comes with four. (too bad they're not more like centipedes--creepy but delicious) ;)

Easy--took 30 min in my convection? Not sure why it was longer for me. Next time I may omit the cinnamon, craisins, and walnuts and add some peanut butter, peanuts, and chocolate chips (after cooling) to see what that would be like.

Easy for big groups. Very moist and flavorful. I cooked 2 large roasts @275 then up to 400--took about 2 hrs.
