Easy--took 30 min in my convection? Not sure why it was longer for me. Next time I may omit the cinnamon, craisins, and walnuts and add some peanut butter, peanuts, and chocolate chips (after cooling) to see what that would be like.

Modenese Pork Chops

Six Threes Ice Cream

I may have rated this before, but the longer I have the recipe, the more I like it. This is soooo good with fresh fruit and makes a light summer dessert without heating up my kitchen. It keeps well in the freezer without getting icy.

Curried Couscous with Spinach and Chickpeas

I used less olive oil--just drizzled to my liking and used 2 large English cucumbers, seeded. Other than the tedious peeling and chopping of the fresh garlic, it was pretty quick. Next time I will just use my garlic press to speed things up.

Roast Leg of Lamb with Rosemary

I didn't have time to marinate this overnight--just about 4 hrs. I pureed the marinade as per others' suggestions. I also cooked it at 350 instead of 400 which seemed to be just about perfect. I took it out at 140 and let it rest. It was perfectly pink in the middle. My family really liked it.

Chocolate Chip Banana Muffins

Quick easy way to use overripe bananas. I add pecans. Sometimes I use sour cream if I don't have any yogurt. It made 18 regular sized muffins.

I think I finally got it right. Play with the baking time to get the desired level of runniness...at Ehrmans they were sometimes runny and sometimes dry--I always liked the runny ones better.

Slow Cooker Chicken Marrakesh

I increased the spices except for salt by ~25-30% but otherwise cooked as written. It is a great slow-cooker recipe. I find most slow-cooker recipes to be fairly blah but this was great and was enjoyed by my whole family.

Malidzano Eggplant Spread

I grilled my eggplant till soft and it gave it a nice smoky taste. I made it again today and used pine nuts in lieu of walnuts and added a little smoked paprika--it is delicious!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)

I used more garlic and added it after I turned the zucchini, right before I put it in the casserole, thus just sauteeing it till soft and not crunchy. I used 4 cloves of garlic and put 2 in after each of two batches of zucchini.

Cucumber Tomato Salad with Zucchini and Black Olives in Lemon Balsamic Vinaigrette

A nice alternative to my usual cucumber-tomato-olive-feta Greek salad. The fresh basil really makes it--I used ~1-1/2 c. kalamatas and close to 1/4 c. basil snipped in ribbons

Czech Roast Pork

This was easy and so good. I roasted it on 350 convection and it was a bit overdone 2 hrs after turning it over--next time I'll watch it a little more closely. This is really good with homemade applesauce, braised cabbage, and pierogis.

Blue Ribbon Overnight Rolls

These were easy and very tasty. I brushed them with melted butter and sprinkled some with coarse sea salt, some with sesame seeds, and some with parmesan. They all came out really well. I think I may try these as cinnamon rolls since they can be made overnight.
