Malidzano Eggplant Spread
I grilled my eggplant till soft and it gave it a nice smoky taste. I made it again today and used pine nuts in lieu of walnuts and added a little smoked paprika--it is delicious!

Zucchini e Pomodori Gratinati (Zucchini and Tomato Gratin)
I used more garlic and added it after I turned the zucchini, right before I put it in the casserole, thus just sauteeing it till soft and not crunchy. I used 4 cloves of garlic and put 2 in after each of two batches of zucchini.

Kentucky Biscuits
Super quick and easy--I keep buttermilk powder on hand so I can throw these together quick in the mornings.
